Herbs like mint, coriander, basil are very sensitive and clever. Sensitive because they cannot last very long and clever because they are very elusive, not available when required. In my case the herb is mint, I buy it sometimes thinking I would make chutney or pulao or chaats. Then I forget about it and it is somewhere stuck in the bottom of the vegetable drawer. My solution to using pudina/mint is making these flaky pudina dhania paratha.
This recipe can be quickly made with leftover chapathi/roti dough. Quickly chop up some fragrant mint leaves and here I have also added dhania/fresh coriander. Today we are back with one more kid friendly, lunch box recipe from FOI. Sabsige soppu paratha or dill leaves paratha makes an excellent paratha to pack for the lunch box. These parathas do not have filling, the dill leaves are mixed with the atta and kneaded into a dough. They are then rolled out like plain parathas by folding them triangles.

Any rice bhaat or pulao made with fresh homemade masala is very flavourful. Years ago when I was learning cooking and experimenting with recipes I developed this masala for menthya soppina bhaat. The most important thing I learnt while making this masala was that toor dal enhances and actually brings out the taste of methi leaves/menthya soppu.

Spinach or palak is a super vegetable/greens. It is loaded with nutrients and fibre and especially good for children. Because eating spinach is somewhat clichéd, children get into the habit of not consuming this wonder vegetable/greens. But add palak into soft palak paratha, they will come back for more.
Try and incorporate vegetable/greens into the dish itself so that it cannot be separated out. It makes wonderful soft parathas and is a great dish for lunch box, picnics or travel.
Palak paratha is quite simple to make although it does require a bit of preparation. But it is worth the effort as it does not require any side dish but you can make do with some yogurt on the side. Did you know that tomatoes can be ‘grated’ into a coarse puree. I learnt this recently from an article which mentioned ingredients that can actually be grated. So these grated tomatoes add a new kind of texture to soft tomato paratha. I have used this technique to make super tasty red tomato paratha.

Theplas are Gujarathi masala/spicy rotis made with light spices, vegetables or greens like methi/fenugreek leaves. Theplas have simple spices like fennel/saunf and the dough is kneaded with a little yogurt which makes them soft. Adding methi leaves makes them extra tasty and flavourful. These are one of the most portable dishes, they are easy on the stomach, have very less oil yet soft and filling. They are kid-friendly and this will definitely make them like and eat their greens.
