Crisp golden yellow hued banana chips mildly flavoured with coconut oil is a delicacy. Those perfectly fried chips have a sweet taste and the light pungency of coconut oil rounds up the flavours. Can I say that I like banana chips better than potato chips (may be not, I love them both!). I love making banana chips at home, it’s very quick and easy to make.
I generally don’t fry the entire lot in coconut oil (but please do if you want). I add a few drops of coconut oil for that unmistakable flavour in my banana chips. Ensure you have kept the frying pan with hot oil on the back burner, a sincere suggestion is to not do this with small children around. Whatever the weather is, we all need a cup of our hot beverage, tea or coffee or milk. In childhood days, it was almost customary to have freshly baked goods once in a few weeks. Rajma masala was one of the first recipes I had posted 2 years ago when I started FOI. A super yummy gravy recipe that goes well with roti or chawal. Usually I tend to make extra rajma so I can eat it with both roti and chawal. But sometimes we do get bored of roti and chawal. When it’s raining or in the cold winter months there is always a need of a nice snack to munch on. Along with your favourite hot beverage like chai or coffee, imagine eating spicy mirchi bajji. Makes you drool, isn’t it? Unlike many other recipes this takes only a few minutes to prepare. A few mirchi (fat green chillies) is all you need. Other ingredients are basic and you can find them on your shelf.
All you have to do is, de-seed the chillies, quickly make the batter, dip and fry. A plateful of hot mirchi bajji gets ready in almost a jiffy. I sometimes wonder if making tea or coffee takes longer:). But ensure to de-seed the chillies especially if children are eating.
