Flavourful, fragrant and filling, methi matar paneer pulao
07/29/2017 9:45:22 PM vindhyadesai
Pulaos and bhaat are my favourite items to pack for lunch box. Ideal to just heat up and eat without any mess. Being made of rice I generally restrict this affair to once a week. Not that we do not consume rice but it’s mostly in the form of curd rice (done! stamped! my absolute fav!). This methi matar paneer pulao is special and I make it once in a while.
An easy one-pot rice dish from FOI once again. It has fragrant whole garam masala making it extremely flavourful. This methi matar paneer pulao has not 1 not 2 but 3 protagonists as is apparent from the name of the dish! ... “Methi Matar Paneer Pulao | Paneer Recipes | Pulao Recipes”
Flavourful and tasty, pack for your lunch box – special menthya soppina bhaat
05/13/2017 10:11:34 PM vindhyadesai
Any rice bhaat or pulao made with fresh homemade masala is very flavourful. Years ago when I was learning cooking and experimenting with recipes I developed this masala for menthya soppina bhaat. The most important thing I learnt while making this masala was that toor dal enhances and actually brings out the taste of methi leaves/menthya soppu.
I can easily say this is my favourite bhaat of all time. It is so flavourful and aromatic without using a lot of strong spices. Light subtle spices along with desi ghee make this menthya soppina bhaat sing and dance with glory 🙂 ... “Menthya Soppina Bhaat | Methi Bhaat | Bhaat Recipes”

Adorned with whole black peppercorns, soft and delicious ven pongal
01/02/2017 12:40:47 PM vindhyadesai
A wholesome rice with the simplest of spices has to be pongal. Main ingredients being rice and mung/moong dal along with black pepper they make a super delicious combo. Ven pongal is a variation of khichdi from Tamil Nadu and South India. This is similar to hotel style pongal served with white coconut chutney and tiffin sambar.
Khichdi is the most common dish all over India. It is made in different ways for instance the one, I have already posted from Bengal, khichuri. These dishes are very comforting and most importantly they are one-pot meals. ... “Ven Pongal | Pongal Recipes | Sankranti Recipes”
Mildly spicy, creamy, fragrant Thai green vegetable curry, one-pot meal
12/07/2016 9:03:37 PM vindhyadesai
A bowl of Thai green vegetable curry on a bed of rice is soothing to both the mind and the body. Clean, fresh, fragrant flavours all amalgamated into soft succulent vegetables is a treat. In my opinion, it is one of the best kind of dishes for an early dinner.
Thai green vegetable curry is creamy from all the coconut milk that we add into it. All the fresh spices and flavours from the Thai green curry paste get absorbed by the veggies. This makes one fall in love with Oriental cuisine and flavours. ... “Thai Green Vegetable Curry | Curry recipes”
Tasty and flavourful with crunchy groundnuts, gorikayi/chavlikayi bhaat
10/31/2016 9:52:05 PM vindhyadesai
After a month long celebration of festivals if you are craving to eat something simple and light, try one of the bhaat/rice recipes. Here’s the recipe for a simple gorikayi bhaat made using cluster beans/gorikayi or chavlikayi. These beans are hardly used but when eaten tender they can be very sweet. These beans have a unique taste and are very fibrous. I have also added peas which pop in the mouth and give extra texture along with the crunchy groundnuts/peanuts.
Here’s a simple cluster bean chutney as well to try. Flavours from jaggery and tamarind add the essential sweet and sour notes to this along with rasam powder giving it a hint of spice and fresh taste. I served this with capsicum raitha/saasme. Gorikayi bhaat is a simple one pot recipe, perfect for your lunch box or for festivals or even for that picnic you are planning. ... “Gorikayi Bhaat | Cluster Beans Bhaat | Chavlikayi Bhaat”
A spicy and tangy stew made with different kinds of chillies and peppers
05/11/2016 9:39:33 PM vindhyadesai
Vegetarian chilli or chilli non carne is a dish from the American and Mexican region. It is a spicy and tangy stew made with different kinds of chillies and peppers with tomatoes and beans as the base. It is thick like a gravy with different vegetables adding a lot of texture along with the beans. This dish is high in protein and has various layers of flavours with each type of chilli adding its own flavour.
It can be served with various types of accompaniments like plain salted tortilla chips, pita chips, plain tortillas or tacos, cooked and fluffed up couscous. It can be served as starters with a big pot of chilli in the centre or even just on its own. I use this as a base for other dishes like enchiladas, burritos, filled tacos, all mouth watering Mexcian dishes. Make a big batch and use it for different recipes. I do this for atleast 2 meals.
Only one type of bean can be used or a mix like black eyed beans, red kidney beans, butter beans, lima beans, mung beans etc. If you do not have the types of chillies mentioned in this recipe substitute them with any type of Mexican chillies or bell peppers. Most supermarkets do stock these kinds of chillies in jars as pastes or powders, they stay good refrigerated for a few months. ... “Mixed Bean Veg Chilli | Chilli non Carne”
