A new year has begun and resolutions are flying around. A snack to keep up the ‘light-eating’ resolution, roasted phool makhana. First of all, I would like to say that I am back from a brief hiatus from blogging after my maternity break. So, to start with a simple recipe for new mothers. A quick stir fry is what is sometimes required to lift the flavours in a meal. I would say it is only second to a spicy chutney to make as an accompaniment to cleanse the palate. And it would be even better if the stir fry is nutritious like this sabsige soppu stir fry! All it needs is some sweetly toasted garlic and sabsige soppu stir fry is ready in no time at all.
Dill leaves or sabsige soppu has a beautiful fennel/sompu like taste which is used as a herb in many cuisines. On some mornings when you are short on time and do not have idli or dosa batter on hand, simple breakfasts come in handy. But upma/uppittu or avalakki can be boring sometimes and their turn for the week is up then we need some more ideas up our sleeve. One such recipe is my favourite Karnataka special bahala bhaat or mosaru shavige.
Bahala bhaat or mosaru shavige is a cooling shavige/vermicelli dish. It is loaded with fun things like cashews and raisins and of course the main ingredient is cooling mosaru/yogurt/curd. In my experience most vermicelli varieties take about 3-4 minutes to cook or 5 minutes tops! As soon as I see ripe bananas 2 things come to my mind, a freshly baked banana bread loaf or a thick and yummy creamy milkshake. This time I again photoshot apple banana milkshake. I have already posted apple banana smoothie with granola. This time it is a simpler one with just ripe bananas and pulpy apple.
Optionally add some oats to make this wholesome and some ice cream for some decadence! I generally add honey to make milkshakes or smoothies but feel free to add sugar instead as per your taste. We often discard the leaves, seeds and peels of vegetables and fruits. Mangalore cucumber or southekayi if it is tender, the seeds are very much edible or atleast the extract that comes out of it. So if you are making Mangalore southekayi huLi/sambar then store the seeds they can be used to make this Mangalore southekayi beejada tambli or saaru. The idea is to grind and extract the pulp and liquid out of the seeds. This liquid is then mixed with well beaten fresh yogurt.
