A new year has begun and resolutions are flying around. A snack to keep up the ‘light-eating’ resolution, roasted phool makhana. First of all, I would like to say that I am back from a brief hiatus from blogging after my maternity break. So, to start with a simple recipe for new mothers. A quick stir fry is what is sometimes required to lift the flavours in a meal. I would say it is only second to a spicy chutney to make as an accompaniment to cleanse the palate. With Navratri in progress we are all busy with gombe habba/golu. Everyday, for naivedya and distributing prasada to neighbours and friends we need those usli/sundal recipes. along with lots of sweets we need to make fasting recipes for Navratri. So here we are today to learn kadale kaalu usli or black chana usli/sundal.
For any type of usli the main flavouring spices are in the form of fresh flavours, ginger, green chilli, fresh coconut. Then a squeeze of lime/lemon juice makes the usli very flavourful. Ginger is added to any usli to aid in digestion. Many people make usli masala with jeera, pepper etc but I like it just plain, simple and fresh. Tea time has arrived in my home and it is raining outside. What’s the first thing that comes to your mind? Onion pakoda? Ok ok, question session is over, let’s go make some karum karum churmuri or masala puri (don’t confuse with the masala/e puri chaat).
When I was thinking of a one-line summary for churmuri I had to put ‘karum kurum’ in it. That has to be the best way to describe it, there is no other way to it, in my opinion. On some evenings after having a big meal during the day we all want that one simple dish to finish the day. Saame akki or little millets or muraiya seeds are very tiny millets that look like miniature versions of the rice grain. A simple porridge made with this wonder grain is really very satisfying.
