As I mentioned in my post, bharwa karela posted a few days back, karela and lauki are one the most used vegetables in India. They are staples, nutritious and healthy. But how do we disguise these vegetables in this age of fast food seeking people. A simple lauki sabzi or lauki dal will not sell and it will remain as cooked. Lauki thepla or paratha is one easy way to hide lauki and kids will love it! By the way, this is healthy recipe #5 in this series.

Idli is one of the best breakfasts ever to be invented on earth in my opinion. They are so light and fluffy and very nutritious. Adding more nutrition into your idlis, sounds good right? Lauki or bottlegourd or doodhi or sorekayi is a great vegetable. It has so much goodness, so incorporating this goodness into steamed idlis, it gets my thumbs up. Lauki idli is one of the best ways to feed fussy kids with some lauki.
All lauki idli needs is some preparation in the form of soaking some idli rice. Idli rice or fat grained rice is best for this recipe, you can get this type of rice in any Indian grocery store. I have also added some upma rava or sooji into the batter to make the idli light and to give it some extra texture. We always end up looking for ideas for making simple side dishes. Especially mild cooling side dishes always need a lot of thinking. This sorekayi raitha is a nice and easy side dish. It is soothing to the gut and sorekayi/lauki is good for you.
Sorekayi raitha is also called sorekayi hasi majjige huLi. It has all the ingredients a majjige huLi has except chana dal/kadale bele. See the regular Karnataka style majjige huLi recipe. Any day it’s our home style food that will make us feel comforted. These are the dishes your mom or granny used to make isn’t it? It will immediately make one nostalgic! My home style kind of food is South Indian food especially dishes like Karnataka style majjige huli (huLi).
Karnataka style majjige huli has ground coconut as the main ingredient along with kadale bele a.k.a chana dal. These two are ground together with minimal spices making extremely flavourful and nice and thick!
I really love to lap up Karnataka style majjige huli. A steaming bowl of rice along with a few sandige (fryums or fritters) and a pickle to taste on the side. Kofta dishes are one of those dishes which are a whole meal on their own. They are like starters but the gravy in which they float in, is a tasty side dish for rotis or rice.  Lauki ke kofta is delicious crisp on the outside and soft and flavourful on the inside.
Kofta are very similar to cutlets/dumplings. These are added to an aromatic gravy. The kofte absorb the flavours from the gravy and become moist and soft. This gravy tastes best with rotis/phulkas. If you are among those who do not like lauki then this flavourful rich gravy will surely transform you 🙂

There is nothing like a wholesome meal of rice mixed with saaru/rasam or sambar/huLi/kootu. Imagine hot sambar/kootu on rice with some ghee on top, that is a great combination. Kootu is a Karnataka style masale huLi/sambar, it is made with freshly roasted spices and ground with freshly grated coconut. Kootu also has a special type of tadka/vaggarne/tempering generally with groundnuts added to it. A simple homemade halwa is very satisfying. Flavours added just from aromatic elaichi/cardamom and smooth creaminess added from milk. Lauki or bottle gourd is like butter and this halwa has an almost melt in the mouth texture. A quick fix sweet when guests are coming over. The best part is, it can be served at room temperature or even a little warm. It is soothing to the gut especially if you have eaten spicy food or feeling acidic. I have not added khoya/khova to this halwa.
