Recipes of dosas which do not involve a whole lot of ingredients to soak and grind are my favourite kind of dosas. Majjige dosa or buttermilk dosa is one of those kind of dosas. Simple, light dosas, these are easy on the stomach too!
Making majjige dosa involves only 3 main simple ingredients, rice, poha, buttermilk. Although this dosa batter needs fermentation, you can easily get away with fermenting the batter for only a few hours(3-4). ... “Majjige Dosa | Buttermilk Dosa | Dosa Recipes”

Beetroot Saasme | Beetroot Raitha | Raitha Recipes

Bright, colourful and cool, beetroot saasme or beetroot raitha
01/07/2017 4:52:15 PM vindhyadesai

Saasme or raitha is one common dish I make with any South Indian meal like this beetroot raitha, carrot saasme, sorekayi (lauki) saasme etc. After a hearty lunch with hot and spicy sambar, huLi, saaru, kootu or rasam you will need something to cool things off. Plain yogurt does the trick most of the times.
A very good way of consuming more vegetables is to mix it with yogurt/curd to make a raitha. This beetroot raitha or saasme is a very good way of consuming this bright yet humble vegetable. ... “Beetroot Saasme | Beetroot Raitha | Raitha Recipes”

If there is a dish popular after masala dosa then it has to be set dosa. Set dosas are called so because unlike masala dosas these are served in a set. The number is usually 3 dosas but some serve 2 or 4.
Set dosa is soft and fluffy with very light crispness on the outside. This is a very popular dish amongst Darshini visitors. This is quite filling and a plate per person is sufficient for breakfast. ... “Set Dosa | How to make set dosas? | Dosa Recipes”

Carrot Halwa | How to make carrot halwa?

Juicy moist sweet carrot halwa with cashews and raisins
10/21/2016 6:45:02 PM vindhyadesai

Carrot halwa is a famous Indian sweet made from grated sweet carrots, sugar, milk, ghee all sauteed till it turns into a sweet, soft halwa. This light orange coloured sweet is loved by children and is a good way of getting children to eat some carrots. The halwa is flavoured with elaichi and along with added cashews and raisins this halwa is fit to be laid out for a feast.
This is one of those sweets where you do not have to check whether it is set or worry about making a threaded sugar syrup. The only thing to get this halwa to a soft and moist consistency is to stop sauteing it at the right time so that it is moist enough and does not dry out. The pictures below illustrate at what stage the halwa needs to stop cooking.
This will surely be a hit with everyone and is a good sweet to prepare in large quantities. It is easily portable and is a crowd pleaser. It can be served both as a sweet or dessert. Fancy it up a bit by serving with vanilla ice cream right on top. Do try more halwa and other sweet recipes from FOI.

It seems like a very complicated recipe to make but with only a few ingredients it can be one of the most easiest sweets to make if you get the consistency right. Turmeric latte is a craze in the West nowadays. It is our good old arishina haalu(turmeric milk) or haldi doodh. Caffeine based drinks are being replaced by this golden yellow coloured liquid goodness. To make it festive and classy I have also added strands of fragrant saffron(kesar) along with warming spices like pepper, cinnamon powder, dry ginger powder(saunth), elaichi and nutmeg. It can be consumed for fasting rituals or vrat. It is a very nice beverage to be consumed to maintain overall health as it has a lot of good warming spices. Enjoy this delightful beverage!
