Carrot halwa is a famous Indian sweet made from grated sweet carrots, sugar, milk, ghee all sauteed till it turns into a sweet, soft halwa. This light orange coloured sweet is loved by children and is a good way of getting children to eat some carrots. The halwa is flavoured with elaichi and along with added cashews and raisins this halwa is fit to be laid out for a feast.
This is one of those sweets where you do not have to check whether it is set or worry about making a threaded sugar syrup. The only thing to get this halwa to a soft and moist consistency is to stop sauteing it at the right time so that it is moist enough and does not dry out. The pictures below illustrate at what stage the halwa needs to stop cooking.
This will surely be a hit with everyone and is a good sweet to prepare in large quantities. It is easily portable and is a crowd pleaser. It can be served both as a sweet or dessert. To make it festive and classy I have also added strands of fragrant saffron(kesar) along with warming spices like pepper, cinnamon powder, dry ginger powder(saunth), elaichi and nutmeg. Mediterranean cuisine is a very vast cuisine. It covers various regions with a wide variety of dishes. Over the last few days I have posted recipes which are simple dips from the Mediterranean cuisine. These dips can be easily converted into a big party platter, forms a great starter with simple nibbles to munch on. The dips included Hummus, Roasted Red Pepper Hummus and Tzatziki. This platter is great for parties or potlucks. Very easy to prepare, easy to put it all together and is very portable. Nibbles and snacks can include very simple things like sliced avocado, pita chips and even tortilla chips (ok may be not Mediterranean but tastes awesome!). Other common things from the Mediterranean region like olives, some Greek Feta cheese (available in most supermarkets) all make up for great snacks on this platter. Theplas are Gujarathi masala/spicy rotis made with light spices, vegetables or greens like methi/fenugreek leaves.
