Gojjus are side dishes to awaken your taste buds. They are spicy, tangy and sweet light gravies usually mixed with a small amount of hot rice or eaten as a side dish with chapathis/rotis. Gojjus can be made using different kinds of vegetables or even fruits. Bitter gourd, cucumber, pineapple, apple, capsicum, fenugreek seeds (methi), sesame seeds(til/yellu) various kinds can be used. Each of these render a special flavour to a gojju. Here’s the recipe for apple gojju.
Unique tasting ingredients are roasted into a masala and then ground up with the spices to make the thick gravy. I have already posted pineapple gojju recipe and here’s the apple gojju recipe. Apple gojju is quite rare but is definitely very tasty as apples have a very sweet unique taste with lot of body and texture.

Moreover they are available throughout the year in most places especially in tropical places. There are so many variety available, big lemon sized ones, small ones, soft ones and even red ones etc. I have used green soft gooseberries almost seedless, which are not very sour to make jam as given in recipe below. In traditional South Indian cuisine it is customary to have a balance of all flavours when eating a meal, especially a big meal on a festival or in big spreads like in weddings. Gojju is like a curry but thicker and is served in small quantities as a little side dish to eat with hot rice. This dessert is a speciality dish from Austria very famously made in one of its cities, Vienna. So here is Dish 6 from the World Cuisine Series from Austria. It is a pastry based dessert made with apples, puff pastry and other dry nuts. Strudel apparently is a word from German language. Traditionally, homemade strudel is a rolled pastry with fillings inside. The first time I tried it, I made it in the traditional way (few photos included from v1). Banana bread or banana loaf makes for a nice breakfast. It is fruity, lightly spiced with cinnamon and wal-nutty. You can make it ahead of time. It stores well for 2 days at room temperature or 3-4 days when refrigerated. It has a nice deep colour from the brown or muscavado sugar. I make it with wheat flour(atta) and tastes better if it is toasted with butter. The key to a good loaf of banana bread is to use ripe bananas which makes the bread moist. Orange marmalade is a fruit preserve made with oranges(obviously) and lemon, boiled with sugar till it is set. The speciality of a marmalade is peels or shreds of skin are added to get all the flavour of the fruit. Use organic fruits where possible especially when consuming the skins or peels. Preserving sugar or regular granulated sugar can be used. Lemon juice cuts through the sweetness of the oranges and gives a nice zing between orange flavours. Taste the oranges before making the marmalade, if the juice is bitter try avoiding those oranges. I learnt to make this from a recipe published by a supermarket. They make it in bulk, I have adapted the recipe to yield about 400-450 gm of marmalade. Orange marmalade on buttered toast is the best way to eat this.
