Chocolate is one of the most favourite flavours in any part of the world. Be it ice creams, cakes or any dessert where chocolate can be incorporated. If not, just smooth chocolate sauce can be drizzled over anything you want. Did you know that chocolate dosas similar to crepes are now in vogue.
This is a basic eggless version of chocolate cake and can be used to make other delicious cakes with thick frosting, layered cakes, festive cakes and much more.
Making cakes does not need to involve eggs at all. Cakes still turn out to be moist and soft. Moreover I have used whole wheat flour to make this cake. And I bet you would not notice any difference. How’s that for a healthier version of your favourite dessert, chocolate cake!

Generally most of us eat regular white bread or nowadays health conscious people eat whole wheat bread. But did you know that different countries especially like India, Mexico, Italy, France have their own specialty breads. In India, of course we have rotis, phulkas, chapathis, kulchas, naans, yes, the list is endless. Similarly in Mexico they have different types of bread like tortillas, corn bread etc. They are a corn loving nation and their corn tortillas are so good!
Corn bread is a very different bread and unique in taste. It is so moist and soft almost like a cake that it can be served just on its own without anything on the side. Here I have served it with guacamole, a Mexican condiment like our chutney. Corn bread has these pop-in the mouth corn niblets with tiny puddles of corn sweetness filled in them. During Deepavali/Diwali, making Shankarpali/Shakkarpare snacks is very common. They are deep fried biscuits which are crisp with both salty and sweet versions. How about trying baked versions of this famous snack? Baked shankarpali are easy to make and you can change the flavours as you want. Here I have used only butter whereas some people do use vegetable shortening (dalda) which does not contain very healthy fats hence I generally never use it.
These can be made in bulk and 1 cup of all purpose flour yields a lot of biscuits. Just store these biscuits in air tight containers and they last for a few days. The base for both versions is the same. I have illustrated the base for both biscuits and then extended them into their respective flavours.
The sweet version can also be made plain without any nuts but adding almonds-cashews gives them a nice texture and flavour. The salty ones can also be made plain or even ground black pepper can be added in place of ajwain-jeera. The choice is yours! Is it a cake, is it ice cream? As the name says, it is ice cream cake. Ice cream filled into a cake base and frozen back to solid. This is recipe number 100, a big milestone for Food Of Interest. Thank you to all those who have liked Food Of Interest and for trying out my recipes. It is my humble effort to try out and document Vegetarian/Vegan recipes from India and all over the world. This decadent, indulgent ice cream cake is adapted from Chef Lorraine Pascale‘s ‘Indulgent Ice Cream Cake’. It has a Swiss roll cake base (plain cake with layers of jam or marmalade all rolled into a tight roll) and vanilla ice cream filling. Use Swiss roll cake if you get it or try homemade one (recipe will be posted on FOI), or use regular Pound cake for the base. Layering a bowl with cling wrap is very essential for the cake to be inverted from the bowl and that resembles a half-spherical cake. More details in the recipe below. Thin puff pastry layers with crunch of sugar and juicy fragrant apples baked inside, served with custard and vanilla ice cream, sounds like a great combination for an indulgent dessert. This dessert is a speciality dish from Austria very famously made in one of its cities, Vienna. So here is Dish 6 from the World Cuisine Series from Austria. It is a pastry based dessert made with apples, puff pastry and other dry nuts. Strudel apparently is a word from German language. Traditionally, homemade strudel is a rolled pastry with fillings inside. The first time I tried it, I made it in the traditional way (few photos included from v1). The next time I tried it I made it into a cross between a French apple galette and an Austrian apple strudel, looks exotic and is super scrumptious. I have a soft spot for anything savoury 🙂 Whenever I get an opportunity, I try to make savoury things to nibble on. This is Dish 4 of the World Cuisine Series and it is from Mexico. One of my favourite cuisines to prepare and of course to eat (gobble ’em all up). These are muffins with Mexican flavours, corn, jalapenos, cheese, what is not to like about them. Whenever I bake anything I try to make them all with whole wheat. Along with whole wheat flour, I have also used yellow cornmeal which is maize flour, easily available in stores/supermarkets. It gives a nice texture to the muffins, you also get to incorporate another grain and cornmeal is widely used in Mexican cuisine! The most important thing about muffins is not to overmix the batter/mixture which will make them chewy and hard. Mix and make muffins, enjoy them as a snack or for a quick nibble with a glass of milk in the morning. I have not met a single soul who does not like ice cream especially vanilla ice cream. It has to be one of the most eaten, desired and versatile desserts in the world. Make ice cream at home without worries of added preservatives, artificial flavours and colours. This recipe does not involve any cooking at all. There is no need of making a custard for this recipe. The most important thing is to keep all ingredients and your ice cream container chilled and cold at all times to prevent crystal formation and solidfication during churning/blending.
I have used my ice cream machine to churn the ice cream mixture. But it can be very easily churned with a simple everyday use electric hand blender which I will describe below. It is a little extra effort when using an electric blender but worth it nonetheless. I do not have to mention the uses of vanilla ice cream, it is super tasty just plain, or with chocolate brownies or simply whipped up into a milkshake like musk melon vanilla milkshake or this decadent peach and blueberry crumble. The most sought-after, after school treat of the 90’s. Dil Pasand along with Dil Kush were the two types of special stuffed breads available in bakeries. Old style Iyengar bakeries still do sell them. I love the tutti frutti pieces along with the coconut filling inside the bread. The outer cover is a soft and layered sweet milk bread. It tastes so good when eaten warm directly out of the oven. It truly is one of my ‘dil pasand’ (liked) snacks. Banana bread or banana loaf makes for a nice breakfast. It is fruity, lightly spiced with cinnamon and wal-nutty. You can make it ahead of time. It stores well for 2 days at room temperature or 3-4 days when refrigerated. It has a nice deep colour from the brown or muscavado sugar. I make it with wheat flour(atta) and tastes better if it is toasted with butter. The key to a good loaf of banana bread is to use ripe bananas which makes the bread moist.
