Most people would have heard elders saying at home that most of the nutrition is in the peels of a vegetable. Our elders had a lot of practical and wonderful recipes with peels and seeds which we generally discard. And it is definitely the case, peels and seeds do have a lot of nutrition. With lack of time coupled with a general disinterest in consuming nutritious simple vegetables we do not bother to saving peels and seeds. This heerekayi sippe chutney is made from ridgegourd/heerekayi sippe.

Any edible part of a vegetable or greens should not be wasted. They have a whole lot of nutrients. It is appalling to see many vegetables simple being thrown away. Try and use as many parts of a vegetable provided those parts are edible. Tender methi stems chutney is one such dish which can easily be made.

When thinking of what kind of chutneys to make for dosas, idlis or even chapathis I try to find a way to incorporate vegetable in some form. Either in peels form, stalks form or even the vegetable itself.
