First of all, I would like to say that I am back from a brief hiatus from blogging after my maternity break. So, to start with a simple recipe for new mothers. A quick stir fry is what is sometimes required to lift the flavours in a meal. I would say it is only second to a spicy chutney to make as an accompaniment to cleanse the palate. And it would be even better if the stir fry is nutritious like this sabsige soppu stir fry! All it needs is some sweetly toasted garlic and sabsige soppu stir fry is ready in no time at all.
Dill leaves or sabsige soppu has a beautiful fennel/sompu like taste which is used as a herb in many cuisines. On a cold winter morning, imagine having a protein filled breakfast that is steamed and is very healthy for you. No, this is not some fancily described dish but our very own delicious Karnataka special nucchina unde. It is loaded with good protein coming from the dals and steaming these fun bundles makes them extra healthy. Nucchina unde is best enjoyed with bisi bisi paladya or kadhi. A chatpata pickle on the side elevates this dish even more.
For nucchina unde, I like to mostly use togaribele/toor dal, it gives nice body, it is easy to digest and has a sweet rounding taste. Other dals are added to enrich the dish and for different textures. The most important flavouring for nucchina unde is shunthi/ginger/adrak. It is essential for digestion and for the taste it brings out of the dals. I add jeera and black pepper, 2 of my most favourite spices. My go to dish for breakfast or sometimes for dinner is akki roti and especially sabsige soppu akki roti. Coming from Karnataka, I have a soft corner for akki roti. At home, this is the most sought after dish, if we cannot think of anything, then we go for akki roti. This Karnataka style sabsige soppu akki roti or dill leaves akki roti is the best of its kind!
The main things for a good sabsige soppu akki roti, is good rice flour, lots of grated coconut, well grown dill leaves chopped finely. Optionally, you can add a bunch of chopped onions to give it a sweet taste and crunchy texture. Remember to let the rice flour rest by adding a little boiling water to it. Today we are back with one more kid friendly, lunch box recipe from FOI. Sabsige soppu paratha or dill leaves paratha makes an excellent paratha to pack for the lunch box. These parathas do not have filling, the dill leaves are mixed with the atta and kneaded into a dough. They are then rolled out like plain parathas by folding them triangles.
As sabsige soppu paratha does not have any filling it does not turn soggy either. But the biggest advantage by far is you can feed kids some nutritious dill leaves which they generally tend to avoid.
