With much difficulty in this sun starved place I live in, I grew fresh methi by the conservatory door (to soak in some sun at least). Now that Shravana month/masa has started, there are festivals almost everyday. But we cannot make sweets everyday and it is not good to consume so many sweets too. Of course, we do need to offer naivedya during the pooja rituals and what better than a simple yet wholesome ‘Panchamrutha’. Before I write a whole lot I would like clarify that there are many ways in which people make Panchamrutha but this is one way we make at home.
It is about the balance of all ingredients, the 5 nectars , milk, curd, sugar, ghee and honey. On some mornings when you are short on time and do not have idli or dosa batter on hand, simple breakfasts come in handy. But upma/uppittu or avalakki can be boring sometimes and their turn for the week is up then we need some more ideas up our sleeve. One such recipe is my favourite Karnataka special bahala bhaat or mosaru shavige.
Bahala bhaat or mosaru shavige is a cooling shavige/vermicelli dish. It is loaded with fun things like cashews and raisins and of course the main ingredient is cooling mosaru/yogurt/curd. In my experience most vermicelli varieties take about 3-4 minutes to cook or 5 minutes tops! I am always fascinated by Gujarati dishes, some are rich and some are very simple. Gujarati dishes have such cute names too, dhokla, khandvi, handvo, undhiyo, thepla etc. I have always loved khandvi and it was one of the first Gujarati dishes I tried a long time ago. These are so soft and flavourful, I can imagine gulping down a few right now.
Khandvi is made with a simple besan and curd batter, cooked till smooth. This batter is then spread out on a plate and topped with freshly grated coconut and coriander leaves. We often discard the leaves, seeds and peels of vegetables and fruits. There are some vegetables and fruits where the part should not be consumed (like apple seeds, tomato leaves or potato stalks) or is not edible like hard peels etc. But there is no reason why the seeds and peels cannot be consumed if they are edible. Mangalore southekayi beejada tambli is exactly the recipe which resonates the idea of using usually discarded element.
Mangalore cucumber or southekayi if it is tender, the seeds are very much edible or atleast the extract that comes out of it. So if you are making Mangalore southekayi huLi/sambar then store the seeds they can be used to make this Mangalore southekayi beejada tambli or saaru. The idea is to grind and extract the pulp and liquid out of the seeds. This liquid is then mixed with well beaten fresh yogurt.
