Hot huLi a.k.a sambar with rice is a staple in most households in South India. Different regions of course have different ways of making sambar. Varieties of sambar with different vegetables are made. Each type of sambar is different as the masala added varies and vegetables render a special flavour of their own. Mangalore southekayi huli or sambar is a specialty from the Mangalore, Malnad and Udupi regions of Karnataka.
Soft Mangalore southekayi simmered in coconut masala and dal mixture is a super combination. Mixed with hot steamed rice and some ghee on top is a match made in heaven. Mangalore cucumber/southekayi is a cucumber variety grown in Malnad region and it has a very unique taste and texture. Something that reminds us all of childhood has to be peanut chaat/shenga masala/mungphali ki chaat. Delicious, chatpata and yummy, this peanut chaat is quick to rustle up.
All it takes is to have some roasted peanuts and some papdis on hand. I have used homemade whole wheat baked papdis which adds to the taste. Cooling, refreshing Greek Tzatziki dip

Tzatziki, (pronounced ta:t:si:ki) is a yogurt based dip from Greek cuisine. It is very similar to cucumber raitha differing only in the addition of certain ingredients like, olive oil and vinegar. Aromatic herbs like mint, dill (sabsige) are added to make the dip even more delicious. Mint leaves can be cut into chiffonades (mint leaves stacked up, rolled and then cut into thin long strips) or the dill leaves can be finely chopped and added to the dip. Fresh, chilled mixed vegetable gazpacho – Spanish style summer soup

Gazpacho is a cool soup made using finely chopped vegetables. Simple flavours are added like vinegar, black pepper and garlic. Use garlic sparingly, a small piece gives a great hum of flavour to the soup. It is great served at room temperature or slightly chilled. This is freshness at its best! Gazpacho originates from Spain with many variations that have evolved. Greek Gazpacho is also quite famous with added Mediterranean flavours like feta cheese, olives.
This is a healthy soup, with tomatoes and cucumber as the base. Some like it completely pureed and some like it chunky but the best way at least for me, is the soup blitzed till it is slightly pulsed but still has some texture. Whenever we think of Italian food only pizzas and pasta cross our minds. Fresh Italian food is so much more than that. They give importance to fresh ingredients, local produce, Italian plum tomatoes for instance are the most flavoursome tomatoes I have ever eaten. We might not be able to procure ingredients from various places all the time but fresh vegetables that we get locally and seasonally are always the best. This salad is very simple, very tasty yet looks quite exotic. Fresh vegetables with a refreshing vinaigrette poured over bread cubes makes it quite filling yet light.
