As a kid I was always fascinated by big sweet shops. The idea of tasty, succulent sweets all lined up behind a counter makes one drool isn’t it? I have always loved pedas, there are all shapes of pedas, round, square, oval or random shaped. And the flavours, simply superb, kesar, badam, kaju, pista, elaichi, gulab and what not. Moist, melt in the mouth, sweet honey cake reminds me of childhood. This was one of the perks of growing up in the 90’s. A delicacy from the local bakery used to be a treat. Eggless honey cake has to be one of the best cakes on earth. Who agrees with me?

Shahi Tukda is a famous dessert/sweet from the Mughlai cuisine. It is made using bread which is toasted lightly golden and reduced thick sweet condensed milk flavoured with elaichi and saffron is poured over these pieces. The pieces of bread absorb this decadent rich liquid and become succulent and flavourful.
This version is a quick one where bread pieces are not dunked in sugar syrup before thick milk sauce is poured over. Many recipes call for dipping toasted bread in sugar syrup to make it extra soft and moist. This will obviously make the dessert extra special. But if you are in a hurry, make this quick version.
Shahi tukda can be made ahead of time and tastes better as it chills in the refrigerator. Make this with a day’s old bread which increases its absorbing capacity. I have used homemade whole wheat bread for this recipe.

The most preferred dessert when you are looking for an authentic traditional recipe. Mangoes and thick milk flavoured with elaichi, kesar and pista-badam that is a dream combination of ingredients. It used to be made using thick milk rabri/rabdi and adding flavours to it. As the recipe has evolved over the years, it is made with condensed milk, evaporated milk etc. The thick mixture is then frozen in matkas (earthernware pot) to make matka kulfis. Now, one can buy kulfi moulds from shops or even use glasses to freeze kulfis.

But they can be quite expensive to buy and are mostly reserved for special occasions. But what if these kinds of sweets can be made at home with simple ingredients. One such sweet is ‘kalakand’, it is one of my favourite sweets and I absolutely love making it. They turn out to be so moist and are very fresh when made at home.
