Shahi Tukda is a famous dessert/sweet from the Mughlai cuisine. It is made using bread which is toasted lightly golden and reduced thick sweet condensed milk flavoured with elaichi and saffron is poured over these pieces. The pieces of bread absorb this decadent rich liquid and become succulent and flavourful.
This version is a quick one where bread pieces are not dunked in sugar syrup before thick milk sauce is poured over. Many recipes call for dipping toasted bread in sugar syrup to make it extra soft and moist. This will obviously make the dessert extra special. But if you are in a hurry, make this quick version.
Shahi tukda can be made ahead of time and tastes better as it chills in the refrigerator. Make this with a day’s old bread which increases its absorbing capacity. I have used homemade whole wheat bread for this recipe.

Gazpacho is a cool soup made using finely chopped vegetables. Simple flavours are added like vinegar, black pepper and garlic. Use garlic sparingly, a small piece gives a great hum of flavour to the soup. It is great served at room temperature or slightly chilled. This is freshness at its best! Gazpacho originates from Spain with many variations that have evolved. Greek Gazpacho is also quite famous with added Mediterranean flavours like feta cheese, olives.
This is a healthy soup, with tomatoes and cucumber as the base. Some like it completely pureed and some like it chunky but the best way at least for me, is the soup blitzed till it is slightly pulsed but still has some texture. This is one of the most common sweets/desserts made in India for any festive occasion. For festivals, celebrations, weddings, functions, seviyaan kheer/shaavige kheer is a default option. It tastes good at room temperature or warm or even chilled. I have used whole wheat seviyaan (thin and long) and added less sugar. Add more sugar if you like and add more milk if you want the consistency to be thinner. Chopped dry nuts like almonds, pistachios, cashews and raisins add a wonderful aromatic flavour and crunch.
