Bahala Bhaat | Mosaru Shavige | Curd Vermicelli

Creamy and cooling, curd based shavige or Karnataka special bahala bhaat
08/03/2019 3:21:59 PM vindhyadesai

On some mornings when you are short on time and do not have idli or dosa batter on hand, simple breakfasts come in handy. But upma/uppittu or avalakki can be boring sometimes and their turn for the week is up then we need some more ideas up our sleeve. One such recipe is my favourite Karnataka special bahala bhaat or mosaru shavige.
Bahala bhaat or mosaru shavige is a cooling shavige/vermicelli dish. It is loaded with fun things like cashews and raisins and of course the main ingredient is cooling mosaru/yogurt/curd. In my experience most vermicelli varieties take about 3-4 minutes to cook or 5 minutes tops! This can be then quickly cooled and mixed with cool mosaru/yogurt/curd. ... “Bahala Bhaat | Mosaru Shavige | Curd Vermicelli”

Rose Milk With Sabja | Rose Milk | Summer Recipes

A chilled drink to beat the summer heat with mild pink hues, rose milk with sabja
06/04/2019 8:02:52 PM vindhyadesai

As a kid I always used to buy different kinds of cold flavoured milks like kesar badam, pista, rose milk etc. These flavoured milks loaded with sugar and the cooling effect always used to soothe my gut and make me feel energetic. Nowadays neither can I buy those flavoured milks here nor do I want to consume a lot of sugar. So rose milk with sabja seeds was made for Ram Navami this year.
For this simple rose milk with sabja seeds I have used boiled and cooled milk. Basically heat the milk on low flame till it rises up, switch off the flame and allow it cool till room temperature. Then store in the refrigerator for atleast 2-3 hours till chilled. Use authentic rose water to make rose milk. See notes to refer to what you can do in case you do not have good quality rose water or extract. ... “Rose Milk With Sabja | Rose Milk | Summer Recipes”

Peach And Blackberry Crostata | Dessert Recipes

Homemade rustic Italian style pie, perfect for summers, peach and blackberry crostata
05/29/2019 9:25:10 PM vindhyadesai

Summer season in many places is the season of fresh sweet berries and fuzzy peaches and nectarines. I am no expert in making fine desserts nor do I like them very much. I prefer rustic handmade desserts which feel more wholesome and homely. Italian cuisine definitely is all for such dishes. So this peach and blackberry crostata is the answer to represent those dishes.
Peach and blackberry crostata is basically a simple and rustic pie filled with the most fun filling. The best part is making the crust and the crumble topping. It’s a very nice process and tastes oh so delicious because of the butter 🙂 The important part to remember is to use cold butter and cold water to get a flaky crust. ... “Peach And Blackberry Crostata | Dessert Recipes”

The other day I opened the refrigerator door when there was a big heatwave around here, found some blueberries and yogurt. So blended all of these into a chilled blueberry lassi.
Blueberries are rich in anti-oxidants and yogurt has good bacteria for your gut! So that’s a very good combination. Blueberries and lemons are the best of friends, they are inseparable. So why wait, go blend yourself a fancy blueberry lassi which is lip-smacking! ... “Blueberry Lassi | Lassi Recipes | Beverage Recipes”

This month, March’19 Food Of Interest completes 3 full years. I did post the 1st post on March 4th 2016 but I would like to think March and April 2016 were the founding months of FOI. It laid the foundations, setting up the website, finding a nice format for the posts, easy to read and make recipes, indeed it is a special month! With over 15K users per month I thank my readers for trying my recipes 🙂 So here it is and to make it even more statistically special, the 400th post on FOI, on a sweet note with “Basundi“.

Badam Kheer | Badami Payasa | Kheer Recipes

Blanched chopped nutty almonds in fragrant, smooth and thick milk, badam kheer

Anything that involves dry nuts and milk is a sure-shot hit combination. Dry nuts like badam/almonds or cashews add richness and a lot of crunch to a dish. Especially if it is a sweet dish like this badam kheer. Badam kheer has a rich base of badam/almonds of course. Read-on what goes into this kheer and don’t forget to try it 🙂
So, as I was saying badam kheer has badam and along with that, it has kesar/saffron and elaichi. They make this badam kheer really flavourful and you do not need a lot of sugar at all. It’s best to use full cream milk and not skimmed milk. The fats in the milk are definitely required to make the badam kheer thick and flavourful. ... “Badam Kheer | Badami Payasa | Kheer Recipes”

A glass of fresh fruit juice is a saviour on hot summery days. Mixed grape juice and lemon juice are the most served juices in Indian households especially during big gatherings like weddings or other functions. It’s easy to prepare and the tangy taste helps to activate those taste buds! Moreover mixed grape juice also provides the necessary fibre and helps in digestion.
It is very easy to prepare this mixed grape juice, just find yourself a bunch of sweet grapes. I always prefer organic seedless grapes, it’s easy to clean and you don’t have to sieve the juice to get rid of the seeds.
