02/20/2017 9:05:35 PM vindhyadesai
Spinach or palak is a super vegetable/greens. It is loaded with nutrients and fibre and especially good for children. Because eating spinach is somewhat clichéd, children get into the habit of not consuming this wonder vegetable/greens. But add palak into soft palak paratha, they will come back for more.
Try and incorporate vegetable/greens into the dish itself so that it cannot be separated out. It makes wonderful soft parathas and is a great dish for lunch box, picnics or travel.
Palak paratha is quite simple to make although it does require a bit of preparation. But it is worth the effort as it does not require any side dish but you can make do with some yogurt on the side. Throw in some pickle if serving to adults. ... “Palak Paratha | How to make palak paratha? | Paratha Recipes”

Aloo or potato or batata is one super vegetable. Though full of starch and carbohydrates, if consumed in moderation and in tasty dishes it can be quite beneficial. Of course I do not recommend to load up on salted potato chips. But this aloo raitha is both refreshing and cooling.
Aloo raitha acts as a super side dish for pulaos or bhaats or biriyanis. It also has a lot of texture as potato provides a lot of body to the raitha. Just a few simple flavours and voila! you have made yourself a super tasty side dish. ... “Aloo Raitha | How to make aloo raitha? | Raitha Recipes”

Tomato pizza sauce is the base sauce used for most pizzas. In Italy, there are 2 types of pizza sauces that are generally made red (tomato) and white used for pizzas like potato leek pizza etc. This red tomato sauce is also called as ‘Marinara‘ sauce and is the most basic sauce prepared in Italian cuisine.
Tomato pizza sauce is a versatile sauce, it is of course smeared on pizza bases like tomato basil pizza, pizza margherita, veg supreme pizza and many more pizzas. Crisp and hot, everybody’s favourite uddina vada
01/04/2017 9:23:27 PM vindhyadesai
An integral part of a typical breakfast plate from South India is this uddina vada. Be it Karnataka, Tamil Nadu, Andhra Pradesh or Kerala, people love these vadas. It is also called as medu vada/ulundu vadai.
Uddina vada is consumed in various ways. It is usually served with soft rice idlis or just plain with tiffin sambar poured over it called as sambar vada. But my favourite combination is Ven Pongal.
The warm pongal with these crisp vadas is simply to die-for. Along with simple coconut chutney these uddina vada are a delicacy. Even pudina chutney tastes great!
These vadas are generally not prepared for festivals instead they feature on menus for ceremonies. But uddina vada are sometimes prepared for specific festivals depending on beliefs and customs. Uddina bonda on the other hand (same batter) are made for any occasion. ... “Uddina Vada | Medu Vada | How to make uddina vada?”

A wholesome rice with the simplest of spices has to be pongal. Main ingredients being rice and mung/moong dal along with black pepper they make a super delicious combo. Ven pongal is a variation of khichdi from Tamil Nadu and South India. This is similar to hotel style pongal served with white coconut chutney and tiffin sambar.
Khichdi is the most common dish all over India. It is made in different ways for instance the one, I have already posted from Bengal, khichuri. These dishes are very comforting and most importantly they are one-pot meals. ... “Ven Pongal | Pongal Recipes | Sankranti Recipes”

We all love instant recipes be it idlis or dosas. But instant recipes need to have the right balance to turn out to be tasty. Their fermented counterparts enjoy the time to rest and turn out to be light and airy. But adding flavourful things into a recipe like corn or spinach like this instant corn idli makes them taste so good!
Corn idli is made from corn rava (maize rava/cornmeal). This is easily available in grocery stores. Just like making rava idli, this instant corn idli is a specialty. It has yogurt added for moisture and light instant fermentation. The pop-in-the-mouth corn niblets (frozen/fresh) along with sweet raisins make them very unique in taste. ... “Instant Corn Idli | Idli Recipes”

Soft, delicious and filling tomato paratha for travel or lunchbox
11/30/2016 9:54:21 PM vindhyadesai
Did you know that tomatoes can be ‘grated’ into a coarse puree. I learnt this recently from an article which mentioned ingredients that can actually be grated. So these grated tomatoes add a new kind of texture to soft tomato paratha. I have used this technique to make super tasty red tomato paratha.
However, tomatoes should be firm and just ripe to be able to grate them. Of course, they should also be fresh. Nothing stops us from pureeing the tomatoes in a blender. That would work well too. ... “Tomato Paratha | How to make tomato paratha?”
