Many times you need something in the morning which is just warm and comforting. Whatever the weather is, you always feel like eating something soothing to the gut. But obviously we would like something that is not bland. This Maharashtra special, ukad or ukadpendi is one such dish, delicious, simple and easy to make.
Ukadpendi has a thick porridge like consistency. It consists of rice flour and besan mixed with buttermilk mixture. To make ukadpendi delicious roasted groundnuts are added on top with a simple tadka to finish with. Traditional and tasty, 7 Cups barfi with a nutty texture

How do I begin to describe this all time favourite barfi of mine. Years ago I tried this recipe and I have used the same recipe ever since making minor adjustments and changing the size of the ‘Cup’ used to make this 7 Cups barfi.
This 7 Cups barfi has 7 Cups of a combination of simple ingredients like besan, sugar, coconut, ghee, milk and big handful of cashews. The nuttiness imparted from cashews makes the 7 Cups barfi a sure shot favourite with kids. When it’s raining or in the cold winter months there is always a need of a nice snack to munch on. Along with your favourite hot beverage like chai or coffee, imagine eating spicy mirchi bajji. Makes you drool, isn’t it? Unlike many other recipes this takes only a few minutes to prepare. A few mirchi (fat green chillies) is all you need. How do we make breakfast interesting? Or any meal for that matter! I feel a change in the routine dishes that we generally prefer to eat can make it interesting. A simple to make dosa which is also a snack? Sounds different? But this is a very common dish made in Karnataka, heerekayi dosa or ridge gourd dosa. It gets ready in a matter of minutes.

Kofta dishes are one of those dishes which are a whole meal on their own. They are like starters but the gravy in which they float in, is a tasty side dish for rotis or rice. Lauki ke kofta is delicious crisp on the outside and soft and flavourful on the inside.
Kofta are very similar to cutlets/dumplings. These are added to an aromatic gravy. The kofte absorb the flavours from the gravy and become moist and soft. This gravy tastes best with rotis/phulkas. If you are among those who do not like lauki then this flavourful rich gravy will surely transform you 🙂
