Winter is almost over for many of us in the Northern hemisphere. But still the cold lingers on and one feels like eating something chatpata or crisp at tea time. What better than these crisp baalekayi bajji or raw banana fries/fritters. They are crisp, slightly chatpata and soft on the inside.
A simple batter made with besan and a little rice flour to render crispiness. Then a few simple masalas are added which add the right amount of seasoning. Thin slices of raw banana are dunked into the coating batter and deep fried in oil. Bitter gourd or karela is always advertised as a vegetable not preferred by many. But infact it is one of those vegetables made regularly in many Indian homes. Karela, lauki or kaddu (bitter gourd, bottle gourd or pumpkin) atleast one of them will definitely feature on the menu. This might be the reason why it is not liked by many as it is dull, routine and boring. But how about we make the boring bitter gourd or karela interesting and a bit fancy. Bharwan karela is a very commonly made Punjabi dish.
Bharwan karela or stuffed bitter gourd as the name indicates has a flavourful masala stuffing filled into the cavity of karela and then cooked off in a sweet onion base. The flavours mingle so well in this dish and balance the pungent bitterness of the karela really well. Tea-time snack recipes are a must, these snacks are not like everyday staple food items. You cannot get away by making rice, dal, saaru, roti, chapathi, sabzi/palya. Tea-time snacks need to have variety but they cannot be deep fried snacks always. Something that goes with your favourite masala chai is definitely kottambir vadi. I learnt this recipe from a magazine clipping I had saved.
Kottambir vadi is nothing but loads of coriander leaves mixed with different masalas and made into tikkis. Recipes like cheela are simple yet they make your breakfast really hearty. Palak besan cheela is one of my favourites I started making in recent times.It is rich in protein and fibre, and what do I say about the flavour. Moreover it is instant and makes a quick breakfast.
Some simple spices like ajwain and jeera go into this cheela recipe and it makes the palak besan cheela simply great in taste. It is definitely a kid-friendly recipe, a palak besan cheela just before school and they are set to attend the classes! Just skip green chilli for younger kids.

Chakli or muruku is one of the most eternally loved savoury snack in India. In South India this is given so many flavours and made with many kinds of flours these days. Warm, comforting methi kadhi, perfect for those rainy evenings

Kadhi (paladya) and saaru (rasam) work well in all seasons. I can never say no to a meal involving either of these 2 dishes. It gives you an instant feeling of warmth. Methi kadhi is one of my go-to dishes if I have methi in my fridge and after a long day of work. It is so quick to make and methi definitely makes it extra comforting.
This is Rajasthani style methi kadhi whereas Punjabi style methi kadhi generally has pakodas in it. I have already posted Gujarathi kadhi and Karnataka special majjige huLi. Oh, wow so many combinations and so much variety, it’s mind boggling sometimes. For a quick dinner, rustle up some quick jeera rice or peas pulao, and methi kadhi. Serve with pickle and papad. When summer holidays used to arrive we used to always have besan ladoo, avalakki chivda and kodubale at home. My mother always ensured she stocked up on these favourite North Karnataka snacks. Besan ladoo and avalakki chivda are infact the 2 most important snacks in a North Karnataka household. When you visit someone’s house you are sure to be offered these snacks. A cup of fresh chai and guests are served!
The trick to make fragrant and non-pasty/non-dry besan ladoo is patience. Yes you heard me right, you have to fry the mixture on low flame for quite sometime to get the right consistency, colour and taste! I mention it multiple times throughout this post, never ever be tempted to increase the heat on your pan, the mixture will turn into a clay like colour (ew!).

Many times you need something in the morning which is just warm and comforting. Whatever the weather is, you always feel like eating something soothing to the gut. But obviously we would like something that is not bland. This Maharashtra special, ukad or ukadpendi is one such dish, delicious, simple and easy to make.
Ukadpendi has a thick porridge like consistency. It consists of rice flour and besan mixed with buttermilk mixture. To make ukadpendi delicious roasted groundnuts are added on top with a simple tadka to finish with.
