11/08/2018 9:57:24 PM vindhyadesai
Tea-time snack recipes are a must, these snacks are not like everyday staple food items. You cannot get away by making rice, dal, saaru, roti, chapathi, sabzi/palya. Tea-time snacks need to have variety but they cannot be deep fried snacks always. Something that goes with your favourite masala chai is definitely kottambir vadi. I learnt this recipe from a magazine clipping I had saved.
Kottambir vadi is nothing but loads of coriander leaves mixed with different masalas and made into tikkis. The specialty about these kottambir vadi is they are steamed like idli first then roasted on a tawa till crisp. Crisp roasted mungphali/groundnuts add crunch to these Maharashtra special kottambir vadi. ... “Kottambir Vadi | Coriander Tikki | Snack Recipes”

Recipes like cheela are simple yet they make your breakfast really hearty. Palak besan cheela is one of my favourites I started making in recent times. It is rich in protein and fibre, and what do I say about the flavour. Moreover it is instant and makes a quick breakfast.
Some simple spices like ajwain and jeera go into this cheela recipe and it makes the palak besan cheela simply great in taste. It is definitely a kid-friendly recipe, a palak besan cheela just before school and they are set to attend the classes! Just skip green chilli for younger kids.

Crisp and mildly spicy, a favourite tea-time snack, chakli
08/29/2018 8:52:52 PM vindhyadesai
Chakli or muruku is one of the most eternally loved savoury snack in India. In South India this is given so many flavours and made with many kinds of flours these days. A truly great snack and no compromise on the flavours. It’s savoury, mainly salty and hints of spices like ajwain and jeera in the background, a true winner.
At my home, it’s kodubale v/s chakli, with me loving chakli more 🙂 So what do you love more, kodubale or chakli? Of course no would ever deny eating them both if given an option. But for the sake of argument chakli is the best or kodubale, or both. So let’s settle on both. ... “Chakli | Mullu Muruku | Snack Recipes | Diwali Recipes”
Warm, comforting methi kadhi, perfect for those rainy evenings
08/10/2018 8:01:06 AM vindhyadesai
Kadhi (paladya) and saaru (rasam) work well in all seasons. I can never say no to a meal involving either of these 2 dishes. It gives you an instant feeling of warmth. Methi kadhi is one of my go-to dishes if I have methi in my fridge and after a long day of work. It is so quick to make and methi definitely makes it extra comforting.
This is Rajasthani style methi kadhi whereas Punjabi style methi kadhi generally has pakodas in it. I have already posted Gujarathi kadhi and Karnataka special majjige huLi. Oh, wow so many combinations and so much variety, it’s mind boggling sometimes. For a quick dinner, rustle up some quick jeera rice or peas pulao, and methi kadhi. Serve with pickle and papad. This time I had leftover bharwan karela, it made a fancy meal. ... “Methi Kadhi | Rajasthani Methi Kadhi | Kadhi Recipes”
Melt in the mouth, laden with ghee and crunchy nuts, special besan ladoo
08/07/2018 9:18:23 PM vindhyadesai
When summer holidays used to arrive we used to always have besan ladoo, avalakki chivda and kodubale at home. My mother always ensured she stocked up on these favourite North Karnataka snacks. Besan ladoo and avalakki chivda are infact the 2 most important snacks in a North Karnataka household. When you visit someone’s house you are sure to be offered these snacks. A cup of fresh chai and guests are served!
The trick to make fragrant and non-pasty/non-dry besan ladoo is patience. Yes you heard me right, you have to fry the mixture on low flame for quite sometime to get the right consistency, colour and taste! I mention it multiple times throughout this post, never ever be tempted to increase the heat on your pan, the mixture will turn into a clay like colour (ew!).

Traditional and tasty, 7 Cups barfi with a nutty texture
04/24/2018 10:14:06 PM vindhyadesai
How do I begin to describe this all time favourite barfi of mine. Years ago I tried this recipe and I have used the same recipe ever since making minor adjustments and changing the size of the ‘Cup’ used to make this 7 Cups barfi.
This 7 Cups barfi has 7 Cups of a combination of simple ingredients like besan, sugar, coconut, ghee, milk and big handful of cashews. The nuttiness imparted from cashews makes the 7 Cups barfi a sure shot favourite with kids. Making this does require patience but the fruits of labour are sweet and rewarding, you do get a very nice barfi to eat. ... “7 Cups Barfi | Seven Cups Recipe | Sweet Recipes”
Hot, spicy, best snack to munch on in winters, mirchi bajji
01/22/2018 9:31:33 PM vindhyadesai
When it’s raining or in the cold winter months there is always a need of a nice snack to munch on. Along with your favourite hot beverage like chai or coffee, imagine eating spicy mirchi bajji. Makes you drool, isn’t it? Unlike many other recipes this takes only a few minutes to prepare. A few mirchi (fat green chillies) is all you need. Other ingredients are basic and you can find them on your shelf.
All you have to do is, de-seed the chillies, quickly make the batter, dip and fry. A plateful of hot mirchi bajji gets ready in almost a jiffy. I sometimes wonder if making tea or coffee takes longer:). But ensure to de-seed the chillies especially if children are eating. Along with these mirchi bajji I like to make a few aloo bajji as well to counter the heat of the mirchi bajji. ... “Mirchi Bajji | Menasinakayi Bajji | Snack Recipes”
