Hummus dip with notes of sweet roasted red pepper and creamy feta cheese
09/28/2016 9:48:05 PM vindhyadesai
In continuation to my previous post, plain hummus dip, this recipe is a simple extension of it. I wanted this recipe to searchable so I am posting it as a separate one. This is one of the most delicious variations of a hummus dip. It has roasted sweet red bell pepper and creamy Greek Feta Cheese. Feta cheese is available in superstores easily these days. If you cannot procure Feta cheese you can skip it or add some fresh paneer/cottage cheese in place of it, squeeze in some lime/lemon juice before using it. The texture will not turn out to be very creamy but paneer is a good substitute. In keeping with the Mediterranean cuisine, I will reveal the Mediterranean platter in tomorrow’s post. I prepared the platter with these hummus dips featuring in it. Wait and watch this space! ... “Roasted Red Pepper Hummus | How to make red pepper hummus dip?”
Fresh, chilled mixed vegetable gazpacho – Spanish style summer soup
08/15/2016 10:14:26 PM vindhyadesai
Gazpacho is a cool soup made using finely chopped vegetables. Simple flavours are added like vinegar, black pepper and garlic. Use garlic sparingly, a small piece gives a great hum of flavour to the soup. It is great served at room temperature or slightly chilled. This is freshness at its best! Gazpacho originates from Spain with many variations that have evolved. Greek Gazpacho is also quite famous with added Mediterranean flavours like feta cheese, olives.
This is a healthy soup, with tomatoes and cucumber as the base. Some like it completely pureed and some like it chunky but the best way at least for me, is the soup blitzed till it is slightly pulsed but still has some texture. Save a few finely chopped veggies to add on top of your soup, that way you know what exactly you are tasting. Enjoy this super cool soup, read more about Gazpacho! Red bell pepper & avocado grilled cheese with caramelized onions & honey mustard sauce

Sandwiches are a very popular snack liked by both kids and adults. The ways to make a sandwich are endless. Let me share a little anecdote with you all about the origin of sandwiches. I read this little story in a supermarket cafe near my home. Sandwich was apparently invented when a snack was demanded by an Earl from his chef. The Earl wanted a snack for which he would not have had to use a fork and knife to cut his food. The chef thought about serving bread and vegetables in this unique way and thus the ‘sandwich’ came into being.
For this sandwich I have used roasted sweet red bell pepper, healthy and tasty avocado, creamy honey mustard sauce and cheese sandwiched between toasted slices of multi grain-seed bread. ... “Roasted Red Bell Pepper Avocado Grilled Cheese”
