Gazpacho is a cool soup made using finely chopped vegetables. Simple flavours are added like vinegar, black pepper and garlic. Use garlic sparingly, a small piece gives a great hum of flavour to the soup. It is great served at room temperature or slightly chilled. This is freshness at its best! Gazpacho originates from Spain with many variations that have evolved. Greek Gazpacho is also quite famous with added Mediterranean flavours like feta cheese, olives.
This is a healthy soup, with tomatoes and cucumber as the base. Some like it completely pureed and some like it chunky but the best way at least for me, is the soup blitzed till it is slightly pulsed but still has some texture. Whenever we think of Italian food only pizzas and pasta cross our minds. Fresh Italian food is so much more than that. They give importance to fresh ingredients, local produce, Italian plum tomatoes for instance are the most flavoursome tomatoes I have ever eaten. We might not be able to procure ingredients from various places all the time but fresh vegetables that we get locally and seasonally are always the best. This salad is very simple, very tasty yet looks quite exotic. Fresh vegetables with a refreshing vinaigrette poured over bread cubes makes it quite filling yet light. Bored of eating regular bread, butter and jam for breakfast? Why not try an easy comforting breakfast with bread. Easy to prepare and it takes the same amount of time as smearing butter on your toast. Fragrant cinnamon with butter on bread toasted till golden, that has to be a super combination. I used to make only chocolate toast in the same way and I also started making this with cinnamon after I saw the recipe on ‘thepioneerwoman’. This toast is very delicious, warm and you can make it in a jiffy. Keep the butter-cinnamon mix ready at night for an easy breakfast in the morning. I have used homemade whole wheat bread here but store bought bread can be the way to go if you are in a hurry. I have not met a single soul who does not like ice cream especially vanilla ice cream. It has to be one of the most eaten, desired and versatile desserts in the world. Make ice cream at home without worries of added preservatives, artificial flavours and colours. This recipe does not involve any cooking at all. There is no need of making a custard for this recipe. The most important thing is to keep all ingredients and your ice cream container chilled and cold at all times to prevent crystal formation and solidfication during churning/blending.
I have used my ice cream machine to churn the ice cream mixture. But it can be very easily churned with a simple everyday use electric hand blender which I will describe below. It is a little extra effort when using an electric blender but worth it nonetheless. I do not have to mention the uses of vanilla ice cream, it is super tasty just plain, or with chocolate brownies or simply whipped up into a milkshake like musk melon vanilla milkshake or this decadent peach and blueberry crumble. A special dish for Naga Panchmi. Traditional rice dumplings with both spicy and sweet fillings. Spicy filling is a mixture of ground dal with different spices and masala. Sweet filling is made from grated coconut and jaggery with elaichi as the flavour. Outer covering is made using rice flour or ground rice paste. Here I have used rice flour. These kadubu/dumplings are very filling and makes a very good dish to make for a festival. The kadubu/dumplings are made and then steamed for a few minutes covered in leaves. Hurigaalu (roasted pulses and seeds) like peas, mung dal(hesaru bele), chana dal(kadale bele), chick peas, mung beans, avre kaalu(hyacinth beans) etc. are signature snacks of a typical Bangalore-Mysore (South Karnataka) bakery or condiment store. A special mention must go to ‘Subbamma Stores’ an old and famous condiment store in Bangalore, they make the most amazing crisp and traditional snacks (kurukulu tindi). Their hurigaalu is one of the best one can get. I have always wanted to make hurigaalu at home and mung dal particularly is my favourite as they are small, crisp and the masala coats really well.
