Finding innovative ways to make breakfast always leads me to ideas on Pinterest. This is one such idea, overnight carrot cake oatmeal. It has all the ingredients that go into carrot cake. Speaking of carrot cake, I photoshot wholewheat carrot cake with cream cheese frosting almost an year ago and completely forgot about it.
This overnight carrot cake oatmeal has plump raisins, chopped nuts, aromatic spice powders like cinnamon, all spice. Of course it has oats and grated carrots and the special secret ingredient is chia seeds. Chia seeds add a nice touch and they enhance the consistency of the oatmeal.


Just mix everything together and let it sit overnight. By the time you wake up breakfast is ready, just add a little more milk if you like and dig in. And off you go! Healthy, tasty and nourishing. Oats are rich in fibre and carrots are just so good for you!

Ingredients
  • ½ Cup rolled oats
  • 1 Tbsp walnuts and/or pecans
  • ½ Tbsp chia seeds (optional)
  • ¼ Tsp cinnamon
  • ½ Tbsp raisins
  • ¼ Tsp all spice (optional)
  • 1 Tsp brown sugar
  • ¼ grated medium carrot
  • ½ Cup milk
  • 1-2 Tbsp cream (optional)
Method
  1. Gather all ingredients, grate the carrot
  2. Get your desired container, this should ideally be the dishware you can eat out off
  3. Spread out oats right at the base
  4. Layer a few walnuts and pecans
  5. Next raisins can go in
  6. Chia seeds turn is next, sprinkle them all around within the dish
  7. Sprinkle ground cinnamon and all spice
  8. Add a tsp of brown sugar
  9. Mix all dry ingredients evenly
  10. Spread a layer of grated carrot all over
  11. Top with milk
  12. Mix well
  13. A touch of decadence can be added by a dash of cream (totally optional of course)
  14. Lastly spread some grated carrot, raisins and nuts on top for the extra touch
  15. Cover and set aside in the refrigerator overnight
  16. In the morning, see the magic and everything would have become one even consistency, add a dash of milk if you prefer
  17. Enjoy overnight carrot cake oatmeal. Serve chilled!
Notes
The spices add so much flavour, you can skip it and add a a few drops of vanilla essence

Top with bananas if you like, but carrot cake does not have bananas 🙂

Use whole/full cream milk for the full taste

Replace brown sugar with regular granulated white sugar or skip it all together

This recipe can be easily doubled/tripled

Overnight Carrot Cake Oatmeal Stepwise:
Gather all ingredients, grate the carrot
 
Get your desired container, this should ideally be the dishware you can eat out off

Spread out oats right at the base
  
Layer a few walnuts and pecans

Next raisins can go in

Sprinkle ground cinnamon and all spice
 
Add a tsp of brown sugar

Mix all dry ingredients evenly
  
Spread a layer of grated carrot all over
