Serves: 10-12 ladoos
- 1 Cup chiroti rava
- ¾ Cup granulated sugar yielding ¾ Cup powdered sugar
- 5-6 elaichi
- ½ Cup packed grated coconut
- ¼ Cup ghee
- 2 laung
- 12 cashews
- ¼ Cup raisins
- ¼ Cup warm milk + a few more drops
- Powder sugar and keep aside
- Melt ghee, add cashews and laung, fry till light golden colour appears on cashews, at this stage
- Tip in raisins, let them plump up
- Next goes in grated coconut
- Fry for 2-3 minutes till coconut turns little nutty
- Pour rava and fry till aroma is released
- Rava should be lightly roasted
- Add powdered elaichi and mix well
- Now add powdered sugar
- Mix for a minute, turn off heat
- Pour warm milk after a minute or so
- Mix well and ensure milk is incorporated
- Add a few drops of milk, set aside to cool down to lightly warm mixture and rava absorbs some milk
- To make ladoo/unde construct them by slightly pressing them into rounds with clean palms
- Make all ladoos/unde. Set aside to dry out a bit and cool down
- Enjoy them!
If the mixture is crumbly add a few drops of milk but not too much at once!
Small rava works really well (it's also called chiroti rava/semolina)
Nuts can be optional but they add a lot to the texture
Powdered sugar need not be very smooth like icing sugar hence making your own powdered sugar is essential!
