Serves: 6-7 rotis
- 1 Cup upma rava/sooji/coarse semolina/sajjige rava
- 1 Tsp rice flour/akki hittu
- 1 Tsp maida/all purpose flour
- 1 Cup water
- Salt to taste
- 1 Tsp sugar
- ½ Tsp freshly pounded black pepper powder
- ¾ Cup grated coconut
- 1 chopped onion
- 1" chopped ginger
- Few chopped curry leaves
- 2-3 chopped green chillies
- ¼ Cup yogurt
- Oil to make rotis
- Take upma rava in a mixing bowl
- Add rice flour and maida
- Next add salt to taste, hing, black pepper powder
- Stir all dry ingredients together
- Pour 1 Cup water and mix well
- Let it rest and let all water get absorbed for 15 minutes
- Meanwhile, grate coconut, chop green chilli etc. Add grated coconut, chopped green chilli, ginger, torn curry leaves
- Next add finely chopped onions
- Now mix all of these added ingredients into the rava mixture
- Lastly add yogurt/curd. Mix well
- Take a big handful of the mixture, pat lightly (it will be slightly loose)
- Method 1: To make roti, pat the mixture on a tawa (cool)till thin and spread out with the tips of your fingers
- Method 2: Use holige haale/greaseproof paper, spread out the roti. Invert this patted roti onto a heated tawa
- To roast rotis, cover and cook
- When underside turns golden, add a few drops of oil
- Flip and cook the other side as well
- Serve hot with yogurt or butter
Adding coconut should not be compromised with
Few people add sour yogurt/curd. Adding regular sweet yogurt is also just fine!
Resting the rava is very essential after adding water. It gives a chance for the rava to absorb all water
