Benne Biscuit

Iyengar bakery style, smooth & soft like benne or butter biscuits
Ingredients
  • 1 Cup maida/refined flour/all purpose flour
  • ¾ Cup powdered/castor/super fine sugar
  • A pinch of salt
  • ¼ Tsp baking soda
  • ¾ Tsp baking powder
  • ½ Cup minus 2 Tbsp regular oil (neutral oils like sunflower)
Method
  1. Take maida, powdered sugar, salt, baking soda, baking powder in a mixing bowl
  2. Mix everything well and make a well in the centre
  3. Slowly start adding the oil while mixing it
  4. The mixture will resemble coarse crumbs
  5. Make ball shapes out of the mixture and place them on a baking sheet lined with parchment paper
  6. Bake them for 10-12 minutes in a pre-heated oven at 180 deg C. The surface of the biscuits will be soft to the touch with a light golden colour at the bottom when done
  7. Serve them at room temperature
Notes
Sift all powdered ingredients if you like, to ensure even mixing

If the biscuit dough does not shape into balls, add a little more oil and make the balls. Make sure the mixture is still crumbly

The biscuits are off-white or creamish in colour, they should not turn brown, so keep an eye on them while they are baking
