Serves: 7-8 dosas
- 1 Cup regular/sona masuri rice
- 2 Tbsp coconut
- Salt to taste
- 1 Tsp coconut oil
- Water to grind batter
- Add the rice into a bowl
- Wash the rice twice and drain all water
- Pour fresh water and let it soak for 2 hours
- After 2 hours, again drain all water and add the soaked rice into a mixie jar
- Add salt to taste
- Next add grated coconut and pour water to grind
- Grind into a batter, it should not be very thick but pourable
- Add the batter into a bowl
- Pour ½ Cup water into emptied mixie jar and add this to a vessel/pan
- Take 1 ladleful of ground batter and mix with the water
- Bring this to heat
- Add a Tsp of coconut oil
- Mix well and it starts to thicken
- Keep stirring all the time to avoid lumps
- Once it cooks and thickens slightly remove from heat, let it cool
- Mix this with remaining batter
- Now on heated tawa, pour a ladleful and spread into a dosa
- Cover the dosa and cook on low-medium flame
- Lacy ganji dosa is ready to savour!
Always keep stirring the ganji mixture to avoid lumps
Keep the mixture on low flame to avoid the mixture from sticking to the bottom of the vessel/pan
You can also add little more coconut if you want to but the ganji is enough to make the dosa light and lacy!
