3 ways uttapam, choose your favourite topping, tomato, onion, capsicum or even mixed
Ingredients
  • 1 recipe fermented dosa batter or as required
  • 4-5 sliced shallots
  • 2-3 sliced tomatoes
  • 1 sliced green capsicum
  • 1-2 chopped green chilli
  • Black pepper powder to sprinkle
  • Jeera powder to sprinkle
  • Oil to make uttapam
Method
  1. Slice the shallots, tomatoes and green capsicum. Finely chop green chilli and set aside
  2. Heat a tawa, mix the dosa batter very well
  3. Pour a ladleful of dosa on heated tawa and spread lightly, uttapam should be thick
  4. To make onion uttapam, spread sliced shallots all over
  5. Place a few green chilli, sprinkle jeera powder if desired
  6. Spread little oil and cook
  7. When underside is cooked, carefully flip the dosa
  8. Cook till shallots turn soft and the dosa is cooked
  9. Onion uttapam is ready
  10. To make tomato uttapam, spread dosa batter, place few tomato slices
  11. Sprinkle black pepper powder and place few chopped green chilli
  12. Spread oil, cover and cook
  13. Flip and roast the dosa
  14. Tomato uttapam is ready
  15. Similarly make capsicum uttapam, roast well
  16. Capiscum uttapam is also ready
  17. If desired, make mixed uttapam, place capsicum, shallots, tomatoes on same uttapam
  18. Roast and enjoy!

Notes
Ensure you have well fermented dosa batter

As mentioned before, uttapam must be thick, this will hold the toppings in place

Cook uttapam on low flame, the dosa will be thick and it should cook through
