A simple and easy pulao to prepare, carrot pulao with cashews & raisins
Ingredients
  • 2 Cups cooked rice
  • 1 sliced onion
  • 1 Tbsp butter or ghee
  • ½ Tsp jeera
  • 2 cloves
  • 1" cinnamon
  • 10 cashews
  • 2 Tbsp raisins
  • 1 Cup packed or 2 grated carrots
  • ½ Tsp ground black pepper
  • Salt to taste
  • Coriander leaves to garnish
Method
  1. Slice or chop onions, dry roast them in oven for 20-30 mins at 180 Deg C or till crisp. You can choose to fry them in oil till crisp
  2. In a pan, heat butter or ghee
  3. Add jeera and let them splutter
  4. Next add cloves, cinnamon and fry
  5. Throw in a few cashews and raisins, fry
  6. Add grated carrots and stir fry for a minute
  7. Sprinkle ground black pepper, salt and saute
  8. Add cooked and fluffed rice, mix well
  9. Next fried onions can go in, mix well
  10. Garnish with chopped coriander
  11. Serve with a raitha of your choice
Notes
You can also choose to fry the onions in oil till crisp, drain on kitchen towels

Add some green peas or shelled corn if you like

Sprinkle red chilli powder for some extra kick
