Nutty, delicious, fudgy, special kaju pista rolls
Ingredients
For kaju outer covering:
  • 1 Cup cashews
  • ½ Cup sugar
  • ¼ Cup water
  • 1-2 Tsp milk
For filling:
  • ½ Cup pista
  • 2 Tbsp powdered sugar
  • Few drops natural green food colour (optional)
  • 1-2 powdered elaichi
  • Ghee to grease
  • 1-2 Tsp water
Method
  1. Add water and sugar to a pan and turn on heat
  2. Let it come to a boil
  3. Let it boil till it reaches one string consistency
  4. Powder cashews by pulsing it a few times
  5. Add cashew powder to sugar syrup and mix well
  6. On low flame keep mixing till it gathers into a lump/dough
  7. Turn off heat, let it cool
  8. To make filling, powder pista by pulsing a few times
  9. Add powdered sugar and mix well
  10. Add green food colour and powdered elaichi if preferred
  11. Next add 1 or 2 drops of water and make a nice dough
  12. Once cashew dough has cooled, knead into dough
  13. Add 1 or 2 Tsp milk and knead well
  14. Place in between 2 sheets of parchment and roll into a thin circle
  15. Cut the kaju sheet in half and also the pista dough in half
  16. Place ½ a log of pista dough
  17. Roll into thinner log
  18. Cut into small rolls and trim the edges if preferred
  19. Kaju pista rolls are ready
Notes
Do not over powder the kaju or pista as they release their oil

Do not over knead kaju dough, knead enough to be able to roll

Ensure sugar syrup reaches 1 string consistency before adding powdered kaju

Lastly, when making pista dough filling, make sure not to add lot of water, just add a few drops to make the dough
