One of the foods I was fascinated with as a kid was plain cucumber cheese sandwich. Cool cucumber slices and salty cheese slices between soft bread, a tasty combination. One more kid friendly recipe from FOI.
Cucumber cheese sandwich can be made with both brown and white bread. I very rarely make or use white bread but cucumber cheese sandwich is one of the few snacks I like to make with white bread. Peel and de-seed cucumber if you want.
Cucumber cheese sandwich can be definitely made ahead of time. A great snack for picnics or for a tea party. I shot this recipe when I arranged a tea party. A few pictures I have posted here 🙂 Easy to put together and it gets ready in a jiffy. More sandwich recipes from FOI:
Fruit sandwich – pair cucumber cheese sandwich with delicious fruit sandwich

Avocado and bell pepper sandwich
- 6-8 white bread slices
- Softened butter
- 2 Tbsp fresh cream
- ¼ Tsp mustard
- Black pepper powder to season
- 4 cheese slices
- 4 X 4 cucumber thinly sliced cucumber
- Trim edges off the bread slices
- Slice cucumber into very thin slices
- In a bowl, mix together cream, black pepper and mustard
- Butter the bread slices evenly
- Spread little paste on bread slices
- Place a few cucumber slices on each slice
- Place a cheese slice
- Close other lid which is smeared with dip and butter
- Cut into half or quarter
- Serve immediately
Spread pudina chutney if you wish instead of cream dip
Make sure butter is softened and at room temperature
Cucumber Cheese Sandwich Stepwise:
Trim edges off the bread slices
Slice cucumber into very thin slices
In a bowl, mix together cream, black pepper and mustard
Butter the bread slices evenly
Spread little paste on bread slices
Place a few cucumber slices on each slice
Place a cheese slice
Close other lid which is smeared with dip and butter
Cut into half or quarter
Serve immediately

I just saw this comment section on the post above. The cucumber and cheese sandwich recipe.
Please add more cucumber to the sandwich. Please, I am no chef but I would like more cucumber.
I don’t like paste, please remove this as well. Too sticky. I know the bottle says non-toxic but it adds a yucky aftertaste, no offence chef.
