Chilli Cheese Toast

Everyone loves cheese and those who love spice/chillies this dish is a treat! Chilli cheese toast is exactly the thing one would like to eat if it is raining outside. Chilli cheese toast is made in various ways. Of course it can be made in many ways, all it needs is 3 ingredients, chilli, cheese and bread.
So use any variety of these 3 ingredients and make your own cheese chilli toast. Cheese and bread can be anything really, so long as cheese is of melting variety like cheddar, processed etc. Bread is a no-brainer, choose any kind.


So what is your choice of chilli? I like the not so spicy, fat variety green chilli for my chilli cheese toast. Choose any you like, may be go for the bird eye chilli variety if you are feeling particularly brave. Whatever is your cup of tea or your choice of the hottest chilli. (Bhut jolokia a.k.a ghost pepper may be šŸ™‚ , or maybe not)
So now that we have established chilli cheese toast ingredients, I will share my version below. I have many versions for this easy peasy snack. I can gorge on these cheesy bites any time.

Chilli Cheese Toast | Snack Recipes

Ingredients
  • Any loaf of bread (I've used plain panini bread here)
  • ½ Tbsp butter
  • 1 Cup grated mozzarella or pizza cheese
  • ½ Cup grated cheddar
  • 2 Tbsp ricotta or eggless mayo or cream or yogurt
  • ½ Tsp black pepper powder
  • Few mild sliced green chillies
  • 1 spring onion thinly sliced
  • A pinch of red chilli powder/cayenne pepper (optional)
  • 1-2 Tbsp pickled jalapeƱo juice only (optional)
Method
  1. Slice bread lengthwise or horizontally into slices
  2. Smear butter and keep aside
  3. In a bowl, add ricotta/cream/mayo/yogurt
  4. Sprinkle black pepper powder and cayenne pepper
  5. Next add grated cheese
  6. Mix gently till cheese gets lightly with the creamy base
  7. Add sliced spring onions and green chillies
  8. Pour little pickled jalapeƱo juice
  9. Gently mix again
  10. Take a big dollop of this cheese mixture
  11. Spread gently over the buttered bread with a dinner/palette knife. Cover all corners
  12. Place a few chilli slices on top. Sprinkle black pepper powder lightly
  13. Toast under a grill or on a tawa or a skillet. If using oven grill at 180 Deg C for 3-4 minutes till cheese melts and edges turn golden
  14. Once all cheese melts, chilli cheese toast is ready
  15. Serve hot!
Notes
This chilli cheese toast has many flavours of chilli in the form of green chilli, cayenne pepper and jalapeƱo juice. Adjust as per your taste

Add grated/finely chopped garlic if preferred

If melting on tawa, melt slowly on low flame

Use a melting variety of cheese, cheese slices also work but grated cheese tastes better
Chilli Cheese Toast Stepwise:
Slice bread lengthwise or horizontally into slices
  
Smear butter and keep aside

In a bowl, add ricotta/cream/mayo/yogurt

Sprinkle black pepper powder and cayenne pepper

Next add grated cheese
 
Mix gently till cheese gets lightly with the creamy base
 
Add sliced spring onions and green chillies
 
Pour little pickled jalapeƱo juice

Gently mix again

Take a big dollop of this cheese mixture

Spread gently over the buttered bread with a dinner/palette knife. Cover all corners
 
Place a few chilli slices on top. Sprinkle black pepper powder lightly

Toast under a grill or on a tawa or a skillet. If using oven grill at 180 Deg C for 3-4 minutes till cheese melts and edges turn golden

Once all cheese melts, chilli cheese toast is ready
 
Serve hot!
