Mediterranean cuisine is a very vast cuisine. It covers various regions with a wide variety of dishes. Over the last few days I have posted recipes which are simple dips from the Mediterranean cuisine. These dips can be easily converted into a big party platter, forms a great starter with simple nibbles to munch on. The dips included Hummus, Roasted Red Pepper Hummus and Tzatziki. This platter is great for parties or potlucks. Very easy to prepare, easy to put it all together and is very portable. Nibbles and snacks can include very simple things like sliced avocado, pita chips and even tortilla chips (ok may be not Mediterranean but tastes awesome!). Other common things from the Mediterranean region like olives, some Greek Feta cheese (available in most supermarkets) all make up for great snacks on this platter. Include other things if you want to like slices of toasted pita bread, roasted aubergines etc. Restaurant quality dishes at home ready in few minutes. Easy on the stomach and on your pockets! Tzatziki, (pronounced ta:t:si:ki) is a yogurt based dip from Greek cuisine. It is very similar to cucumber raitha differing only in the addition of certain ingredients like, olive oil and vinegar. Aromatic herbs like mint, dill (sabsige) are added to make the dip even more delicious. Mint leaves can be cut into chiffonades (mint leaves stacked up, rolled and then cut into thin long strips) or the dill leaves can be finely chopped and added to the dip. This emerald light green coloured grated cucumber dip is very refreshing and cooling. Make this for your Mediterranean platter, recipe up next on FOI. In continuation to my previous post, plain hummus dip, this recipe is a simple extension of it. I wanted this recipe to searchable so I am posting it as a separate one. This is one of the most delicious variations of a hummus dip. It has roasted sweet red bell pepper and creamy Greek Feta Cheese. Feta cheese is available in superstores easily these days. If you cannot procure Feta cheese you can skip it or add some fresh paneer/cottage cheese in place of it, squeeze in some lime/lemon juice before using it. The texture will not turn out to be very creamy but paneer is a good substitute. In keeping with the Mediterranean cuisine, I will reveal the Mediterranean platter in tomorrow’s post. Hummus is the most common vegetable or chip dip, a staple condiment. It is from the Middle Eastern Region and is a staple in the Mediterranean cuisine. Made from chick peas, it is rich in proteins and good fats. Sesame seed paste (tahini) and olive oil add a distinctive taste to the dip. Starters and appetizers always set the tone of a meal. Delicious starters served in the right portions define the quality of the rest of the courses. Kebabs/Kababs are one of the most preferred kind of starters. Kababs are originally from Middle East. These need not be non-vegetarian as is the common notion. Perfectly delicious vegetarian kebabs/kababs can be made and they make great starters to a meal. Boiled potatoes generally form the base of vegetarian kebabs/kababs. Something to munch on during tea-time especially on a rainy lazy Sunday evening surely sounds like fun. Snacks with tea/coffee need not always be deep fried or dunked in a lot of oil and then fried. Snacks can be subtly made and they taste really good without the guilt of a lot of calories. Eggplant or big brinjal/aubergine is not an appreciated vegetable but if it is converted to a tasty, crispy, savoury snack it can be very delightful. I call these Brinjal Coins because they look like big gold coins with the beautiful golden yellow colour rendered by the addition of turmeric/haldi. Any part of a vegetable that is edible should be consumed in its organic form. Discarding good quality ingredients like stalks, peels, clean shoots or roots is probably a sin against Mother Nature and farmers. Consuming vegetables, fruits and greens in their purest organic form is the best way of eating them. Try to convert simple ingredients into nice, tasty and fancy eatables like the one here with beetroot and potato peels. Use organic ones and rinse them beforehand. Want to have something at home to munch on without worrying about calories, then chivda is your snack. Yes, it is not completely guilt-free but it is better than deep fried or sweet snacks on a daily basis. Come tea-time we all feel like eating something with our favourite beverage, chivda sounds definitely mouth-watering. This is a very famous snack from North Karnataka and Maharashtra. Nowadays, it is famous all over. Different things can be added to chivda like mixture, sev, ghatte, broken onion pakoda, roasted dry nuts etc. But the base for making avalakki/poha chivda is the same. Use medium poha/rice flakes for making chivda it gives a nice crispiness and crunch. Enjoy with your favourite cup of tea/coffee or serve with yogurt/curd (super combo!) or madike usli/matki usal (again a super combo!). A sudden craving for a sweet! How about something sweet which also exercises the teeth! Homemade chikki, ‘brittle’ as it is called in western desserts. Wishing everyone a happy Sri Krishna Janmashtami. I wanted to post all recipes a few days before the festival but because of an unscheduled maintenance on the website I had to move them to post today. Chikki is made with roasted peanuts, pistachios or almonds (badam) or any kind of hard dry nuts. It is made by caramelizing sugar or jaggery and the roasted nuts are quickly stirred in and left to cool and then broken into chikkis or brittles. Childhood favourite for many, one could buy these for a small amount and savour them while returning from school. Another recipe, Dish 5 of World Cuisine Series and this time it is from the beautiful country of South Africa. Like I mentioned in the 1st post of world cuisine series, it is always best to eat and source vegetables that are available locally in season. For this recipe use any kind of small squash/pumpkin. The sweet flesh of a squash is very fibrous and is very tasty. It just melts in the mouth when baked/roasted. It is used differently in different types of cuisines. I have adapted this recipe from this blog. There are so many resources out there to learn about new cuisines and new dishes. Make this with any type of squash you can get your hands on and enjoy the flavours. It is gluten free and it can be made vegan by adding a vegan cheese or even skipping it, just roasted will be just as nice! Here I have used gem squash which is a green skinned, yellow fleshed squash(picture below) and is ideal to share for two.
