Karnataka special, sabsige soppu akki roti, the perfect, nutritious breakfast
02/25/2019 9:30:12 PM vindhyadesai
My go to dish for breakfast or sometimes for dinner is akki roti and especially sabsige soppu akki roti. Coming from Karnataka, I have a soft corner for akki roti. At home, this is the most sought after dish, if we cannot think of anything, then we go for akki roti. This Karnataka style sabsige soppu akki roti or dill leaves akki roti is the best of its kind!
The main things for a good sabsige soppu akki roti, is good rice flour, lots of grated coconut, well grown dill leaves chopped finely. Optionally, you can add a bunch of chopped onions to give it a sweet taste and crunchy texture. Remember to let the rice flour rest by adding a little boiling water to it. This will make rice flour nice and doughy and pliable. ... “Sabsige Soppu Akki Roti | Akki Roti | Breakfast Recipes”

Perfect to pack for lunch box, kid friendly, lauki thepla or lauki chapathi
01/18/2019 7:27:05 PM vindhyadesai
As I mentioned in my post, bharwa karela posted a few days back, karela and lauki are one the most used vegetables in India. They are staples, nutritious and healthy. But how do we disguise these vegetables in this age of fast food seeking people. A simple lauki sabzi or lauki dal will not sell and it will remain as cooked. Lauki thepla or paratha is one easy way to hide lauki and kids will love it! By the way, this is healthy recipe #5 in this series.
Knead usual chapathi dough with grated lauki and here I have added roasted ground groundnuts. It enriches the flavour and it goes very well with lauki. Lauki has a soft velvetty texture and groundnuts impart nuttiness and texture to these delicious lauki thepla. Feel free to add jeera, ajwain by slightly pounding them. ... “Lauki Thepla | Lauki Paratha | Sorekayi Chapathi | Lauki Recipes”
Layered and flaky, loaded with fragrant mint leaves, pudina dhania paratha
11/28/2018 9:34:50 PM vindhyadesai
Herbs like mint, coriander, basil are very sensitive and clever. Sensitive because they cannot last very long and clever because they are very elusive, not available when required. In my case the herb is mint, I buy it sometimes thinking I would make chutney or pulao or chaats. Then I forget about it and it is somewhere stuck in the bottom of the vegetable drawer. My solution to using pudina/mint is making these flaky pudina dhania paratha.
This recipe can be quickly made with leftover chapathi/roti dough. Quickly chop up some fragrant mint leaves and here I have also added dhania/fresh coriander. Fancy looking pudina dhania paratha will be ready in a few minutes. All you need is a little patience to get the chapathis rolled out first, stuff them and then make the lacchha. They should then be rolled out again but trust me after the first one they are easy to make. ... “Pudina Dhania Paratha | Pudina Lachha Paratha | Paratha Recipes”
Delicious and filling, bajra methi poori, for lunch or dinner
11/16/2018 8:13:23 PM vindhyadesai
Bajra or pearl millet or sajje is such an important grain in Indian cuisine. It has been cultivated for thousands of years on our soil. So it is without doubt that there are so many recipes using this wonder grain. Bajra methi poori is one of them, it is delicious and filling!
Bajra is a sweet grain, it has an earthiness to it. The methi leaves added to this bajra methi poori balances the sweetness of bajra. I have also added some whole wheat flour/atta to make the dough hold together. All the spices added enhance the taste of bajra methi poori. This is a simple recipe which can be made for lunch or dinner. ... “Bajra Methi Poori | Methi Bajra Puri | Poori Recipes”
Soft, loaded with fibre and nutrition, perfect to pack for lunch box, sabsige soppu paratha
09/26/2018 9:22:53 PM vindhyadesai
Today we are back with one more kid friendly, lunch box recipe from FOI. Sabsige soppu paratha or dill leaves paratha makes an excellent paratha to pack for the lunch box. These parathas do not have filling, the dill leaves are mixed with the atta and kneaded into a dough. They are then rolled out like plain parathas by folding them triangles.
As sabsige soppu paratha does not have any filling it does not turn soggy either. But the biggest advantage by far is you can feed kids some nutritious dill leaves which they generally tend to avoid. Dill leaves are rich in Vitamin A and fibre. ... “Sabsige Soppu Paratha | Dill Leaves Paratha | Paratha Recipes”
Soft paneer paratha, quick to make, delicious to eat for breakfast or dinner
08/21/2018 10:35:13 PM vindhyadesai
Parathas are delicious to eat and some parathas are even easy to prepare. Although the general notion about paratha-making is, it is very time consuming. But not this paneer paratha, nuh huh! The paneer stuffing for paneer paratha is easy to make. It’s a matter of then rolling out the parathas and serving them.
To make life easier I generally knead whole wheat dough earlier and set it aside for gluten formation. Just before making parathas I prepare the stuffing in 5 minutes and roll out soft fresh parathas. Mouth-watering indeed, isn’t it? There are many ways of rolling out parathas, I have shown the sandwich method of making parathas here. ... “Paneer Paratha | Paratha Recipes | Breakfast Recipes”
Soft and crispy, healthy ragi roti, a super delicious roti
07/22/2018 6:19:25 PM vindhyadesai
Ragi or finger millet is such an underrated grain. In Southern parts of Karnataka, Mandya, Mysore and to certain extent Bangalore ragi is grown and used extensively. It is so light on the stomach and gives your strength. It’s farmer’s food, gives them the essential nutrients and keeps them full while they are working away in the field. Hittu or ragi mudde (ragi ball) is a very famous dish made in Karnataka. Ragi roti is another one, thin and mildly spiced rotis made from ragi.
Ragi roti is generally eaten with chutney pudi or chutney, a few onion slices and some yogurt. What a combination, simple dish for a simple living! Grated coconut added to the ragi roti makes them soft and retains good moisture. Sometimes I find making roti is simpler than making chapathi because you don’t need to roll the rotis with a belan (lattanige/rolling pin). ... “Ragi Roti | Karnataka Style Ragi Rotti | Roti Recipes”
