Soft and crispy, healthy ragi roti, a super delicious roti
07/22/2018 6:19:25 PM vindhyadesai
Ragi or finger millet is such an underrated grain. In Southern parts of Karnataka, Mandya, Mysore and to certain extent Bangalore ragi is grown and used extensively. It is so light on the stomach and gives your strength. It’s farmer’s food, gives them the essential nutrients and keeps them full while they are working away in the field. Hittu or ragi mudde (ragi ball) is a very famous dish made in Karnataka. Ragi roti is another one, thin and mildly spiced rotis made from ragi.
Ragi roti is generally eaten with chutney pudi or chutney, a few onion slices and some yogurt. What a combination, simple dish for a simple living! Grated coconut added to the ragi roti makes them soft and retains good moisture. Sometimes I find making roti is simpler than making chapathi because you don’t need to roll the rotis with a belan (lattanige/rolling pin). ... “Ragi Roti | Karnataka Style Ragi Rotti | Roti Recipes”

A very nice alternative to akki roti is this rava roti or sajjige roti. It is very commonly made in Karnataka and is a very popular breakfast dish. Soft yet crisp, rava roti is quite filling.
And what do I say about the taste. Simple, humble yet very very tasty. Rava roti is also quick to make. It can be made in 2 ways, directly patted on a cooled tawa or patted on a greaseproof paper/plantain leaf. I have illustrated both methods here. ... “Rava Roti | Sajjige Roti | Roti Recipes”

Spinach or palak is a super vegetable/greens. It is loaded with nutrients and fibre and especially good for children. Because eating spinach is somewhat clichéd, children get into the habit of not consuming this wonder vegetable/greens. But add palak into soft palak paratha, they will come back for more.
Try and incorporate vegetable/greens into the dish itself so that it cannot be separated out. It makes wonderful soft parathas and is a great dish for lunch box, picnics or travel.
Palak paratha is quite simple to make although it does require a bit of preparation. But it is worth the effort as it does not require any side dish but you can make do with some yogurt on the side. Soft, delicious and filling tomato paratha for travel or lunchbox
11/30/2016 9:54:21 PM vindhyadesai
Did you know that tomatoes can be ‘grated’ into a coarse puree. I learnt this recently from an article which mentioned ingredients that can actually be grated. So these grated tomatoes add a new kind of texture to soft tomato paratha. I have used this technique to make super tasty red tomato paratha.
However, tomatoes should be firm and just ripe to be able to grate them. Of course, they should also be fresh. Nothing stops us from pureeing the tomatoes in a blender. That would work well too. ... “Tomato Paratha | How to make tomato paratha?”
