Those puffed up beauties are indeed such a greatly versatile dish. Everyone loves them adults and children alike, they have some sort of magnetic force. Pooris come in all sorts of flavours and methi poori is a special one.
Fresh and flavourful methi is the key to make flavourful poori. And what else is fresher than homegrown fresh methi aka fenugreek leaves. With much difficulty in this sun starved place I live in, I grew fresh methi by the conservatory door (to soak in some sun at least). On a cold winter morning, imagine having a protein filled breakfast that is steamed and is very healthy for you. No, this is not some fancily described dish but our very own delicious Karnataka special nucchina unde. It is loaded with good protein coming from the dals and steaming these fun bundles makes them extra healthy. Nucchina unde is best enjoyed with bisi bisi paladya or kadhi. A chatpata pickle on the side elevates this dish even more.
For nucchina unde, I like to mostly use togaribele/toor dal, it gives nice body, it is easy to digest and has a sweet rounding taste. Other dals are added to enrich the dish and for different textures. The most important flavouring for nucchina unde is shunthi/ginger/adrak. It is essential for digestion and for the taste it brings out of the dals. I add jeera and black pepper, 2 of my most favourite spices. On some mornings when you are short on time and do not have idli or dosa batter on hand, simple breakfasts come in handy. But upma/uppittu or avalakki can be boring sometimes and their turn for the week is up then we need some more ideas up our sleeve. One such recipe is my favourite Karnataka special bahala bhaat or mosaru shavige.
Bahala bhaat or mosaru shavige is a cooling shavige/vermicelli dish. It is loaded with fun things like cashews and raisins and of course the main ingredient is cooling mosaru/yogurt/curd. In my experience most vermicelli varieties take about 3-4 minutes to cook or 5 minutes tops! Who doesn’t like dosas? Dosas come in wide variety of colours and textures. They can be soft, lacy, spongy, crispy, papery, porous and many more textures. Based on what you add, dosas can be golden brown like in the case of masala dosa owing its colour to methi seeds. So here we are making Kerala special appam with yeast or palappam with a soft lacy texture and white in colour due to coconut milk and rice flour.
Appam with yeast or palappam is made by grinding rice or using palappam flour (rice flour). Here I have used flour to make appam. Appam needs a fermentation agent like yeast or coconut. Starting your Sunday morning or any morning with dosas just off the tawa, sounds like a great idea. But want to try making a different kind of dosa? So here it is, cucumber neer dosa or southekayi neer dosa. Lacy, soft cucumber neer dosa speckled with light green cucumber not only sounds nice but also looks and tastes great!
You can soak rice overnight or just for 4-5 hours. Then you can grind rice with the remaining ingredients and then immediately make dosas. You can also keep the batter overnight/or few hours to lightly ferment and then make cucumber neer dosa. Either way they are delicious.
