Bread Cutlet

Delicious and fun snacks are always welcome in my home! Especially those snacks which are not oily are the ones we look forward to. Yes once in a while it is a-okay to indulge and enjoy snacks like matar kachori, banana chips, palak pakoda. But it’s even better to enjoy snacks with lesser oil in it. Such snacks can still be very tasty just like this bread cutlet.
Bread cutlet can be made with white or brown bread or whole wheat atta bread. Some really fun things can go into bread cutlet. Pop-in-the-mouth boiled peas, sweet corn with capsicum/bell pepper make this snack simply super. All the simple masalas that go in take this cutlet to another level.


Bread cutlet is one of the most favoured after-school snacks that kids really enjoy! So make it fun, place a small piece of cheese inside the cutlet so you will get a gooey, cheesey centre when shallow fried on the pan. Do involve kids to make this snack, they will enjoy making it and then eating them up. Do not forget to supervise, give them simple tasks like tearing up bread or adding in the boiled corn and peas etc.

Serves: 7-8 cutlets
Ingredients
  • 3 bread slices
  • 2 potatoes boiled and mashed
  • ½ Cup boiled peas
  • ½ Cup boiled sweet corn
  • 1" ginger
  • 2 cloves garlic
  • 1-2 crushed green chilli
  • ½ Tsp jeera powder
  • ½ Tsp red chilli powder
  • 1 Tsp amchur powder
  • ½ Tsp garam masala
  • ¼ Cup chopped spring onions
  • 1 Tbsp olive oil
  • ¼ Cup chopped capsicum
  • ¼ Tsp black pepper
  • 1 Tbsp cornflour
  • 1 Tbsp yogurt
  • 2 Tbsp chopped coriander
  • Salt to taste
  • 1 Tbsp olive oil + oil for roasting
Method
  1. Boil peas and sweet corn till soft
  2. Pressure cook potatoes till soft, cool them
  3. Peel the potatoes and grate them
  4. Tear the bread slices into smaller chunks
  5. In a bowl, take the bread pieces and grated potatoes
  6. To this add sliced spring onions and chopped capsicum
  7. Also add boiled corn and peas
  8. Next add crushed green chillies, ginger and garlic
  9. All masalas can go in next, black pepper powder, salt, red chilli powder, amchur, jeera powder
  10. Next add cornflour and yogurt
  11. Mix everything very well
  12. Apply oil and add chopped coriander
  13. Make patties, shape them with a cookie mould if you like
  14. Roast with oil
  15. Flip them and roast till golden
  16. Serve hot with ketchup!
Notes
Use white or brown bread

Add little roasted besan or extra cornflour if the mixture feels wet

Adjust masalas as per your taste

Bread Cutlet Stepwise:
Boil peas and sweet corn till soft

Pressure cook potatoes till soft, cool them

Peel the potatoes and grate them

Tear the bread slices into smaller chunks

In a bowl, take the bread pieces and grated potatoes
 
To this add sliced spring onions and chopped capsicum

Also add boiled corn and peas

Next add crushed green chillies, ginger and garlic

All masalas can go in next, black pepper powder, salt, red chilli powder, amchur, jeera powder
  
Next add cornflour and yogurt
 
Mix everything very well

Apply oil and add chopped coriander
 
Make patties, shape them with a cookie mould if you like
  
Roast with oil
 
Flip them and roast till golden

Serve hot with ketchup!
