Who does not love dosas! I am a big fan of finding new ways of making dosas to bring in variety. So many textures, so many flavours all in a dosa. Soft, lacy, crispy, with filling, without filling, thick or thin, find them all in a dosa! You can make it simple and humble or grand and elaborate. So this time I have come back with a soft lacy dosa recipe ganji dosa or kalikanji dosa I learnt from a magazine.
Ganji dosa or kalikanji dosa is made with a simple rice batter. The most important thing about ganji dosa or kalikanji dosa is the rice does not require a lot of time to soak. Just soak it for a couple of hours. Then the rice is ground with little coconut and some batter is boiled into a ganji (rice porridge). Looks like we are going to make it to the goal, healthy recipe #4 this month, in this new year! I love it when that happens, without overplanning you get to meet the goal. So here we are with one more no compromise on flavour yet healthy breakfast dish. Sabsige soppu kadubu or steamed rice flour dill leaves dumplings. Nice, easy and healthy and more importantly hearty!

Delicate and light filled with coconut flavour, coconut idiyappam is very easy to make. It needs a little patience and you can serve some really fancy looking food in no time. I generally use good quality store-bought idiyappam flour, organic of course. But you can also use rice flour to make idiyappam, check the notes in the recipe card.
For coconut idiyappam it’s best to grind the coconut into a paste before adding to the flour. Idli is one of the best breakfasts ever to be invented on earth in my opinion. They are so light and fluffy and very nutritious. Adding more nutrition into your idlis, sounds good right? Lauki or bottlegourd or doodhi or sorekayi is a great vegetable. It has so much goodness, so incorporating this goodness into steamed idlis, it gets my thumbs up. Lauki idli is one of the best ways to feed fussy kids with some lauki.
All lauki idli needs is some preparation in the form of soaking some idli rice. Idli rice or fat grained rice is best for this recipe, you can get this type of rice in any Indian grocery store. I have also added some upma rava or sooji into the batter to make the idli light and to give it some extra texture. Dosa is such a popular dish that new ways of making them are always welcome. Recipes like cheela are simple yet they make your breakfast really hearty. Palak besan cheela is one of my favourites I started making in recent times.It is rich in protein and fibre, and what do I say about the flavour. Moreover it is instant and makes a quick breakfast.
